Cheat ... Oven baked dum Biryani ... a way to make for large number of people. Party time
Recipe:
A. Fried onion
Slice 1 kg red onion abt coin size thickness. Heat oil in a pan and fry onion till very light golden brown, strain oil and keep a side. The onoin should turn to golden briwn and crispy after cool down. Keep the extra oil , it will be required in chicken and rice.
B. Chicken marinate
1kg chicken ( preferred thigh with bones ) marinate with salt, 2 table spoon ginger garlic paste, 1 tea spoon chilli powder and 3 table spoon lemon juice for 15minute.
Prepare second marinate with 2 cup unsweeten curd, 1 table spoon ginger garlic paste,1 tea spoon tumeric powder, 3 table spoon Biryani masala, 1 tea spoon red chilli powder, 4 cardimum, 5 cloves, 1 bay leaves, 1 inch cinamon stick, 2 big green cardimum, 1 teaspoon cumin seed, 10 to 12 black pepper seed, 2 green chilli slice, 1 cup chopped mint leaves, 1 cup chopped corriender leaves and salt taste, 1 cup fried onion and 3 table spoon fried onion oil. Mix chicken with second marinate and leave over night.(or at least 3 hours)
C. Rice (step to be done when u r ready to cook)
Wash 1.5 kg aged basmati rice nicely to remove excessive starch and soke for at lease 15 minute. In large container add water, 1 tea spoon cumin seed, 1 bay leaves, 5 cardimum, 1 large green cardimum, 10-15 black pepper, 5 cloves, 4 table spoon fry onion oil, 1 green chilli , 1 inch cinnamon stick and salt to taste(tip: water should taste salty as u like ). Bring it to roaring boil for 5 minute. Add socked basmati rice and cook in high heat for 2 minute then reduce flame to low and simner for abt 4 minute. The rice should be cooked only to 75 to 80%.
D. Cook the final step
1st layer :Oil the large aluminum sheet tray with fry onion oil. Lay the marinated chicken in tray( should cover base of tray and do not over lap chicken) , sprinkle fry onion, chopped mint and corriender ,slice green chilli and ginger.
2nd layer: lay the rice , add /sprinkle some of rice water (abt half cup) to prevent drying the top layer when baking and sprinkle fry onion, chopped corriender and mint leaves, slice ginger and green chilli. Sprinkle some fry onion oil. Sprinkle safron water if u have( i just used tumeric . and oil mix for similar color)
Cover the tray with aluminium foil nicely and bake for abt 220 degree for 30minute(pre heat oven befor baking). Lower temperature to 200 degree and bake for 60 more minute.
Take out the tray from oven and rest it for 10 to 15 minute. Note do not open the tray covering yet.
Serve hot. While serving use both layer (rice and meat) in a plate.
