Introducing…A Taste of Italy 🇮🇹 This group presented their unique skill and theme with some style and elegance. Serving a refreshing starter of caprese garlic bread, a delightful but hearty main of chicken osso bucco with roasted vegetables and then topping off the whole affair with a scrumptious lemon poppy seed cake for dessert! As per usual, they managed to handle preparation, plating and serving with all the patience required for Food Service Management 🫣.

The Mediterranean lunch.
This group pulled out all the stops to deliver an excellent lunch!
Their involvement includes doing the decorations on theme, setting the table appropriately, printing menus and place cards, preparing the meals, plating the meals and serving to 48 guests who purchased tickets to attend on the day.

For their starter they offered falafels with a garlic and herb yogurt sauce -yum! Their main was baked Mediterranean hake with aromatic rice and creamed spinach (Popeye would be proud). For dessert they ✨served✨ a gorgeous lemon cake.

Welcome one and all. One of the first tasks of the FSMT333 module at UKZN is a Lunch Group Project. This project entails students forming groups in the first semester and presenting a lunch to paying customers. Now do not be fooled, this is a very extensive assignment requiring countless hours of effort, dedication and research. The group is responsible for choosing a lunch theme, acquiring recipes for the items on the menu, standardization of these recipes, costing, production scheduling, creation of advertising and the menu itself, and tasting of the selected recipes all prior to hosting the lunch. The group is given a set budget to which they must adhere and come out on top with a possible profit.

On the day of the lunch, students within the group as well as a small team of waitron, are required to serve a 3 course meal to all of those attending. Often majority of the work and planning is done the day before but there is nothing more exciting than the lunch itself! 🥂
