In 2009, mom and I had a temporary moment of insanity and opened Fresh Thymes Cafe. I was heart broken and needed a muse to keep moving forward. Mom loved the corner and saw potential. So many people told us we were insane to open this business in the worst economy. We did nothing as text book business. Honestly, we had no idea what we were doing. I took the knowledge I had gained over the years and we loved to cook so we dove into uncharted waters. Our landlord gave us a chance. Sometimes, it is that one person that gives you that one opportunity that changes your life forever. I am eternally grateful to Mr. Dewson for that.
My brother, a true chef, helped us get started. Thank goodness because I was terrified. The Cafe brought us so many angels. It was all a whirlwind, but there we were a huge part of our beautiful community. I was teaching people about the power of food and health. We were watching people enjoy our space. We witnessed laughter and tears. Not everyone liked us and that's OK. It taught me to have somewhat of a backbone and still not easy for me. We learned in a world where media, social media, and just as humans want us to think the worst about things. But the truth is we learned what an incredible beautiful world it is and full of some amazing people. I think we became a beacon of light on our little corner. As our landlord offered us an opportunity, we tried to offer others a chance. If you just believe in that one person, it can make a world of difference in their life. I truly believe we are here to lift each other and not work against each other.
This Cafe has created a lifelong community. Thanks to social media I can see the families we nourished grow up. I love when people share their memories or kids still remember coming for Saturday breakfast. I still remember many of your orders and the coffee mugs you liked to use. Fresh Thymes was so amazing. It exhausted my body, but led me to Costa Rica.
I tried to branch off of Fresh Thymes Cafe and start Thyme to Balance to continue to support families with healthy food ideas, support, and personal coaching. I kind of had to let it go when I had cancer and haven't been as successful post cancer. So I am going to give it another shot, because I have just worked too hard to let it go. It warms my heart to support people and watch you glow up. So in the next few weeks you will see more from me again. You can like the Thyme to Balance page and follow me here too. I am still so grateful for all of you. For giving us a chance, as we stepped out of our comfort zone to share with you. Food and wellness and less disease for the world are truly passions of mine. 💜🙏

Trying some new foods today! Grilled Caribbean chicken with grilled breadfruit, yuca, and a delicious cabbage salad. We also got some Bay Rum tea. I learned that Bay Rum tea is good for when you have a headache and body pains, which coincidentally, I do today. When the leaves dry out, it can be used as an incense to repel mosquitos. Loved the food. It is super healthy, too. 💜🙏

I keep being told to eat more vegetables. I wonder if I eat enough? 74 vegetables and it is only June 5. Eat vegetables every meal. Well, usually. And enjoy the art of food. 🤣🥴💜🙏

As you transform in your health, you build awareness of how you are feeling now. It makes it easier to let go of those things in your past that didn't make you feel good. This week pick one thing to be aware of and journal about it. Maybe it is how do you feel before and after eating gluten or drinking a soda. Maybe it is tuning into your environment or a relationship. See what you discover by the weekend. Have a wonderful week!

Cancer research has lacked for women's health, yet cancer is a big deal for women's health. How many women do you know that have received a cancer diagnosis? I am one of those women, and I want to help you not receive that diagnosis. Today I am focusing on endometrial/ uterine cancer, because that is what I had.
1. It is linked to excess body weight and lack of physical activity.
2. Linked to taking hormones. This could be the birth control pill or hormone therapy.
3. Early onset of menstruation or late menopause.
4. Personal history of infertility or not having children.
5. Personal or Family history of non-polyposis colorectal cancer or polycystic o***y syndrome (PCOS).
6. Personal history of breast or ovarian cancer.
I encourage you to get regular check-ups with your gynecologist. I am happy to educate you on ways to elevate your healthy lifestyle and work towards cancer prevention.
