I’m gonna say it one more time for the people who haven’t heard it before. This is one of my all time favorite gluten free spots in Portland šŸ‘šŸ¼ The menu was incredible and the staff is well trained is cross contact!

It's easiest to with cross-contact! Cross contact is when a gluten free food comes into contact with a gluten free food making it no longer celiac safe.

Remember, it is possible to eat out safely at restaurants (I do it all the time!) and learning how to cook celiac-safe yourself will help you do just that!

Looking for an Allergy Friendly Valentine’s Day treat for someone special?

I took these dark chocolate and sunflower seed butter cups from and transformed them into something extra special ā™„ļø

Dark Chocolate Sunflower Butter Cups
Ingredients:
* 6 Dark Chocolate Sunflower Butter Cups
* Topping Ideas:
* Shredded Coconut
* Fresh Berries
* Dried fruit
* Nuts/Seeds
* Cocoa Powder
* Powdered Sugar

Directions:
* For Coconut/Raspberry: unwrap sunflower cups and place on a baking sheet under a broiler for 20-30 seconds or until top has just begun to melt. Be careful, this happens quickly! Remove cups from oven and sprinkle with coconut and top with raspberry. Return to freezer to cool completely before serving.
* For Nuts/Seeds: follow instructions for Coconut. Cool completely before adding cocoa or powdered sugar.
* For Cocoa/Sugar Heart Dusted: DO NOT HEAT. Cut out a paper heart shape stencil and place in top of sunflower cup. Dust with powdered sugar or cocoa powder. Remove stencil and enjoy!

I made a GIANT BATCH of the most delicious gluten free mochi waffles over the weekend and am in love!

What is Mochiko Flour?
Mochiko Flour is also known as Sweet Rice Flour or Glutinous Rice Flour.

Despite the name, it is naturally gluten-free and has a chewy and sticky texture.

It's commonly used in Hawaii to make desserts like butter mochi or even fried mochiko chicken!

I always keep mochiko flour stocked in my pantry, and now have another reason to use it!

Being careful of the kitchen tools you use is AS IMPORTANT as making sure the food is gluten free.

Every person with Celiac Disease wants to feel safe when eating. In Celiac-Safe cooking, we have to be careful of two things, choosing gluten free foods and cross contact. (For more information on cross contact, see my previous post!)

Messages across the internet stress that you NEED to replace your ENTIRE kitchen with brand new tools that have NEVER touched gluten? šŸ¤·šŸ»ā€ā™€ļø (anyone else experience this?)

All these messages are doing is fostering an unnecessary sense of fear.

Knowing which tools are safe to share can open up the possibilities of eating out at restaurants, helping family members cook for you, and even using a kitchen at an AirBnB while traveling.

Gluten Free Pasta šŸ

Some people think that finding great gluten free pasta is an impossible task. The REAL secret is knowing how to cook gluten free pasta properly. If not, any pasta you make will end up mushy!

Remember, gluten’s role in pasta is to help keep the nice chewy texture that we all know any love. Without gluten, it can taste grainy or crumbly.

Here are some brands of gluten free pasta that are commonly found nation wide! My favorite isĀ  (it’s the closest that I can find to regular pasta)!

5 Simple Ways to Eat Better and Make Lifelong Habits

Most people who make New Years resolutions or goals often don’t stick to them throughout February.

Why?

They might be unrealistic, too general, or irrelevant!

The S.M.A.R.T method for goal setting involves creating and setting measurable goals that you can actually stick to. Setting these types of goals help you to make LIFELONG habits to better your health!

S- Be specific. ā€œI’m going to eat betterā€ is too general. What does ā€œbetterā€ mean? Do you want to eat more of something (vegetables, fruits, home-cooked meals, or protein)? Do you want to eat less of something (fats, cookies, candies, sugary drinks)?

M - Measurable. Make sure that you can measure (often this means choosing a number) the frequency of amount related to your goal. For example, choose a specific amount of vegetables that you want to eat or the frequency of home-cooked meals that you want to bring to work.

A - Attainable. Be realistic with yourself. If you rarely cook at home, is it really attainable to have a goal that includes eating 5 home-cooked meals each week? Probably not…choose to cook 1 day out of the week. Something is better than nothing!

R - Relevant. This one is an important one - it is your ā€œwhy.ā€ WHY is it important to reach this goal? If you focus on the reason(s) why this goal will help you in some way, it’s easier to stick to!
ex) running a 10K, having more energy during workouts, experiencing less fatigue at work, lowering cholesterol levels, etc.

T - Time. Give yourself a deadline (whether it’s a week, month, or few months) so that you can check in with yourself on that date to see if you accomplished what you set out to do. Alternatively, you can assign a date to complete a task each week (like designating Tuesday nights to cook at home from scratch).

Last thing I want to add is to include a friend or partner in your goal! They can help you stay accountable, and also inspire you to keep going (it’s a win-win in my opinion).
