Hi, I am Alexandra Wiedholz

From an early age, I loved to bake and share treats with family and friends. My first vivid recollection is baking spritz cookies with my grandmother at eight years old. I surprised many teachers, and my grandmother, when I announced that I would try to become a pastry chef instead of pursuing a university degree. I grew up in Germany where I went through a traditional

apprenticeship in an established pastry shop before working in several acclaimed hotels and restaurants throughout Germany and Switzerland. My work also brought me to France, Italy, and Hong Kong to further my education in all things Sweet. After becoming Chef Patissier in the three star Michelin restaurant “Schwarzwaldstube” in Baiersbronn, I attended the Meisterschule in Cologne (Germany) to earn the qualification of a Master Pastry Chef. While being there, I discovered my true passion – teaching others about the details of my craft. I taught continuing education classes for pastry chefs in a small school in Munich, Germany, before moving to the United States to teach at the Culinary Institute of America. I stopped teaching there only because we had to relocate for my husband’s job, and I still miss it. Ever since, I have taught a few classes here and there, but mainly wrote articles for a German magazine for professional pastry chefs. I develop recipes, create the sweets, and take pictures of the entire process. While this is rewarding, I would like to focus more on teaching others again. Are you ready to dive into a delicious fall baking adventure? On Thursday, October 10th, I’m hosting a special virtual class at 10 am PDT where you’ll learn how to make an authentic Viennese apple strudel from scratch! Even if you’re new to my classes or baking, this is the perfect opportunity to join a fun, interactive session guided by a professional passionate pastry chef!

In this live, online class, we’ll bake together from the comfort of your own kitchen. I’ll be there with you every step of the way, providing expert guidance and answering your questions in real-time. You’ll have a front-row seat as I demonstrate each technique, ensuring you can replicate this Austrian classic with confidence.

These Stollen add a ton of options to your holiday repertoire. Nut free, quick to make, and they do not need to age before they are at their best - perfect for some last minute holiday baking and spontaneous gift giving.

They are also made without candied fruits so they are perfect for people who like enriched holiday breads but are not a fan of pieces of fruit inside them. You can choose between a speculoos filling and a poppy seed one, but those are only starting points. I will teach you how to add your own spin to this traditional treat.
