Shingo Gokan is one of the most influential bartenders of his generation, known for combining Japanese precision with creative, globally inspired cocktail making.

After moving to New York in 2006, he spent years at the legendary Angel’s Share before gaining international recognition by winning the Bacardi Legacy Cocktail Competition in 2012. He later founded SG Group and created acclaimed bars across Tokyo, Shanghai, New York and Hong Kong, including Speak Low, The SG Club and Sip & Guzzle.

His career has earned major honors including International Bartender of the Year at Tales of the Cocktail in 2017, Altos Bartenders’ Bartender in 2019 and the Roku Industry Icon Award in 2021. Beyond running bars, Gokan has helped bring Japanese drinking culture to a global audience through projects such as The SG Shochu and cocktails that combine Japanese ingredients, technique and storytelling.

Increasing the average guest spend at a bar is less about pushing people to buy more and more about making higher-value choices easy.

Bartenders can suggest premium spirits instead of automatically using house pours, recommend a second drink at the right moment, and pair cocktails with small plates or shareable snacks.

Bars can also design menus to highlight profitable signature cocktails, use appealing descriptions, and include premium options that make mid-priced drinks feel more accessible.

Comfortable seating, good lighting, music, and open tabs can encourage guests to stay longer, which naturally creates more opportunities for additional rounds and food orders.

David Wondrich is one of the most influential historians of cocktails and American drinking culture.

A former English professor turned drinks writer, he has spent decades researching old recipes, forgotten bartenders, historic bars, and the origins of classic cocktails.

His work, including the award-winning book Imbibe!, helped bring serious historical research into the modern cocktail world.

Fernand “Pete” Petiot (1900–1975) was a French bartender best known for his role in creating and popularizing the Bloody Mary cocktail.

While working at Harry’s New York Bar in Paris during the 1920s, he experimented with a simple mixture of vodka and tomato juice and later developed it by adding ingredients such as lemon, Worcestershire sauce, cayenne pepper, and celery salt.

In 1934, Petiot moved to New York City and became head bartender at the King Cole Bar in the St. Regis Hotel, where the drink was served under the name Red Snapper because “Bloody Mary” was considered unsuitable for the elegant hotel.

Petiot remained at the St. Regis for more than three decades, and his flavorful version of the drink became the foundation of the modern Bloody Mary, making him an important figure in cocktail history.
