🧀Real Carbonara Is Easier Than You Think 🧀

If you've never made real carbonara at home, this is your sign. No cream, no shortcuts — just eggs, cheese, guanciale, and a little pasta water working together to create the silkiest sauce you've ever tasted. It comes together in about 30 minutes and feels completely restaurant-worthy.

📌Ingredients

175g (6 oz) guanciale (or pancetta or block bacon), skin removed, cut into thick batons
2 large eggs
2 egg yolks
100g (3.5 oz) parmigiano reggiano, finely grated (or pecorino romano)
¼ tsp black pepper
400g (14 oz) spaghetti
1 tbsp kosher salt (for pasta water)
½ cup pasta cooking water
1 garlic clove, finely minced (optional)

Optional garnish: fresh parsley, extra parmigiano

📌Instructions

Make the sauce base. In a large bowl (big enough to toss your pasta in later), whisk together the eggs, egg yolks, grated cheese, and black pepper until smooth. Set aside.

Cook the pasta. Bring a large pot of water to a boil with 1 tablespoon of salt. Cook the spaghetti according to package directions until just cooked through — firm but not hard. Before draining, scoop out at least 1 cup of pasta cooking water. Drain and set aside.

Cook the guanciale. While the pasta cooks, add the guanciale batons to a cold skillet and bring it up to medium heat. No oil needed — the guanciale will render its own fat. Cook until the edges are golden and crispy, about 6–8 minutes. If using garlic, add it in the last minute and stir until fragrant.

Toss pasta with guanciale. Add the hot drained pasta directly into the pan with the guanciale and toss well so every strand gets coated in that rendered fat. Don't skip this step — it's what keeps the eggs from scrambling in the next step.

Combine with the egg mixture. Tip the hot pasta and all the pan fat (every drop!) into the bowl with the egg and cheese mixture. Add ½ cup of pasta cooking water immediately and start mixing vigorously using the handle of a wooden spoon — spin the pasta around continuously for 30 seconds to 1 minute. You'll watch the pale, watery liquid turn into a glossy, creamy sauce that clings to the pasta. When it's no longer pooling at the bottom of the bowl, you're done.

Serve right away in warm bowls. To warm your bowls quickly, stack them and microwave for 1 minute, or run them under hot water. Garnish with extra cheese and parsley if you like.

🍓🧀Strawberry Crumble Cheesecake Bars 🧀🍓

Creamy, dreamy cheesecake bars layered with fresh strawberries and a buttery golden crumble — all on a classic graham cracker crust. These are the kind of bars that disappear fast!

📌 Ingredients:
1.5 cups graham cracker crumbs
4 tablespoons salted butter, melted
2 tablespoons granulated sugar
16 ounces cream cheese (2 blocks), softened to room temperature
0.5 cups granulated sugar
0.3 cups plain Greek yogurt (or sour cream)
1 teaspoons vanilla extract
2 large eggs
3 cups fresh strawberries, tops removed and chopped
0.3 cups granulated sugar
1 tablespoons cornstarch
0.8 cups all-purpose flour
0.3 cups light brown sugar, packed
4 tablespoons salted butter, melted

📌 Directions
Prep your pan: Preheat your oven to 325°F. Line a 9×9-inch baking dish with parchment paper and give it a light spray with cooking spray. Set it aside — you'll be ready to go before you know it!

Make the graham cracker crust: In a small bowl, combine 1.5 cups graham cracker crumbs, 2 tablespoons granulated sugar, and 4 tablespoons salted butter, melted. Stir until everything is well mixed. Press the mixture firmly and evenly into the bottom of your prepared baking dish. Then pop it in the oven for 10 minutes

Make the cheesecake filling: In a large mixing bowl, beat 16 ounces cream cheese (2 blocks), softened to room temperature and 0.5 cups granulated sugar together with a hand mixer until smooth and creamy. Add 0.3 cups plain Greek yogurt (or sour cream) and 1 teaspoons vanilla extract and mix until just combined. Then add 2 large eggs and mix until just incorporated — don't overmix here! Pour the cheesecake batter over the cooled crust and spread it into an even layer.

Prep the strawberry layer: In a large bowl, toss together 3 cups fresh strawberries, tops removed and chopped, 0.3 cups granulated sugar, and 1 tablespoons cornstarch until the strawberries are completely coated. Spread the strawberry mixture evenly over the cheesecake layer.

Make the crumble topping: In a small bowl, mix together 0.8 cups all-purpose flour, 0.3 cups light brown sugar, packed, and 4 tablespoons salted butter, melted until a crumbly mixture forms. Sprinkle it evenly over the strawberry layer.

Bake: Bake for 75 minutes
to 1 hour , or until the crumble topping is beautifully golden and the center just barely jiggles when you give it a gentle shake.

Cool and chill: Remove from the oven and let cool completely at room temperature. Then transfer to the refrigerator and chill for 4 to 6 hours before slicing and serving. I know, the waiting is the hardest part!
