After this Labor Day weekend, we’re recognizing the Bagel Bakers Union Local 338, the group of mostly Eastern European Jewish immigrants who organized in the early 20th century to protect their craft and livelihoods.

For decades, no bagel in NYC was made without them. They negotiated wages, protected working conditions, and preserved the art of hand-rolled, boiled bagels.

In the New York Times article from 1951, “Bagel Famine Threatens in City; Labor Dispute Puts Hole in Supply” you can see the power that the Union held when they went on strike. Hilariously, a “Lox Strike Expert” was brought in to mediate the dispute, as the Times reported the next day.

There’s lots more to be said about the Local 338. But most importantly, every bagel we eat today owes something to their fight. Respect the roll. Protect the boil 🥯✊
