You Won’t Believe This Zucchini Bread is 100% Vegan! 🍞🌱

Vegan Zucchini Bread Recipe

🔹 Dry Ingredients:

2 ½ cups (310g) all-purpose flour
1 cup (190g) packed brown sugar
3 tsp baking powder
1 tsp ground cinnamon
½ tsp ground nutmeg
⅛ tsp salt
🔹 Wet Ingredients:

1 ½ cups (~190g) grated zucchini (about 1 medium)
⅔ cup (165g) dairy-free milk
⅓ cup (85g) neutral oil or light olive oil
⅓ cup (75g) dairy-free yogurt or unsweetened applesauce
1 tbsp apple cider vinegar or lemon juice (optional)
1 tsp vanilla extract (optional)
¾ cup (130g) mini dairy-free chocolate chips (optional)
How to Make It:
1️⃣ Preheat oven to 350°F (175°C). Grease a loaf pan.
2️⃣ In a bowl, whisk all dry ingredients together.
3️⃣ In another bowl, mix wet ingredients. Stir in grated zucchini.
4️⃣ Gradually add dry ingredients to wet ingredients. Stir until just combined. Fold in chocolate chips if using.
5️⃣ Pour batter into the pan and bake for 50-60 minutes, or until a toothpick comes out clean.
6️⃣ Let it cool before slicing. Enjoy!

🍍 Pineapple Upside-Down Cupcakes – Sweet, Buttery, and Irresistible! 😋

Ingredients:
1 can (20 oz) sliced pineapple, drained (reserve the juice)
1 box yellow cake mix (Betty Crocker or Duncan Hines Pineapple Supreme)
½ cup vegetable oil
3 eggs
⅓ cup butter, melted
⅔ cup brown sugar, packed
12 maraschino cherries, cut in half
Instructions:
🔥 Preheat oven to 350°F (175°C) and grease a 24-cup muffin tin (or 12 for larger cupcakes).
🍍 Prepare the pineapple: Cut each slice into 4 small pieces and set aside.
🥄 Make the cake batter: In a large bowl, mix cake mix, oil, eggs, and reserved pineapple juice. Beat on low for 30 seconds, then on medium for 2 minutes.
🍯 Brown sugar mixture: In a small bowl, mix melted butter and brown sugar. Spoon 1½ tsp into each muffin cup.
🍒 Assemble: Place 2 pineapple pieces in each cup. Add 1 cherry half in the center.
🧁 Fill with batter: Spoon ¼ cup batter into each muffin cup.
⏳ Bake for 20-25 minutes, until a toothpick inserted in the center comes out clean.
🌀 Cool & flip: Let cool for 5 minutes, then run a knife around the edges and invert onto a cookie sheet.

📝 Ingredients:
1 cup milk
1 cup sweetened flaked coconut
1 tsp light cream
1/2 cup sugar
2 tbsp cornstarch
2 eggs, separated
1 tsp vanilla
1 pie crust (store-bought or homemade)
8 oz whipped cream
🥣 How to Make the Ultimate Coconut Cream Pie:
1️⃣ Bake the Crust:

Bake your pie crust according to the package instructions and let it cool completely.
2️⃣ Prepare the Coconut Base:

In a double boiler, combine milk, light cream, and sugar. Bring it to a boil gently.
3️⃣ Thicken with Cornstarch:

Mix 2 tablespoons cornstarch with cold water. Add this to your boiling milk mixture, stirring constantly until thickened.
4️⃣ Whisk in Egg Yolks:

Beat the egg yolks until light in a bowl. Slowly add some of the hot mixture to the yolks, then pour it back into the double boiler.
5️⃣ Simmer Until Thick:

Stir everything together in the double boiler for about 5 minutes, until it thickens beautifully.
6️⃣ Add the Magic:

Remove from heat and stir in vanilla and sweetened coconut. Let it cool for around 30 minutes.
7️⃣ Assemble Your Pie:

Classic Beef Stew

Ingredients:

2 pounds beef bouillon, cut into 1-inch pieces
1 cup all-purpose flour
½ tsp salt
½ tsp ground black pepper
1½ cups beef broth
4 medium carrots, sliced
3 medium potatoes, cubed
1 medium onion, chopped
1 celery stalk, chopped
1 tsp Worcestershire sauce
1 tsp ground paprika
1 garlic clove, minced
1 large bay leaf
🧑‍🍳 Directions:
1️⃣ Coat the Beef:
Place beef in a slow cooker. Mix flour, salt, and pepper in a bowl, pour over the meat, and stir to coat.

2️⃣ Add the Good Stuff:
Add beef broth, carrots, potatoes, onion, celery, Worcestershire sauce, paprika, garlic, and bay leaf. Stir well to combine.

3️⃣ Let It Simmer:
Cook on low heat for 8–12 hours or high heat for 4–6 hours, until the beef is melt-in-your-mouth tender.

4️⃣ Serve & Savor:
Remove the bay leaf and serve hot. It’s cozy, delicious, and sure to bring smiles to the table!

🌟 Recipe: Southwest Chicken Salad 🌟
Ingredients:

1 lb cooked shredded chicken (about 3 breasts)
1 can (15.5 oz) black beans, rinsed and drained
1 can (15.25 oz) corn, drained
1-2 fresh jalapeños, seeded, chopped
¾ cup cherry tomatoes, quartered
½ cup red onion, chopped
¼ cup pepitas
Dressing:

¾ cup mayo
¼ cup fresh lime juice
1 tablespoon chili powder
1 teaspoon garlic powder
1 teaspoon cumin
¼ teaspoon paprika
¼ teaspoon salt
Directions:
1️⃣ In a medium bowl, mix all dressing ingredients until smooth.
2️⃣ In a large bowl, combine the chicken, black beans, corn, jalapeños, tomatoes, red onion, and pepitas.
3️⃣ Pour the dressing over the salad ingredients and mix until well-coated.
4️⃣ Serve as is, in a sandwich, or over a bed of lettuce. Dig in and enjoy!

Whole Wheat Cinnamon Crunch Banana Bread Recipe

Ingredients

Wet Ingredients

2 large eggs
1 cup mashed bananas
¾ cup sugar (reduce to ⅓ – ½ cup if you prefer less sweet)
⅓ cup oil
½ cup Greek yogurt
Dry Ingredients

1 ¾ cups whole wheat flour
¼ cup cornstarch (or more whole wheat flour)
2 teaspoons ground cinnamon
1 ½ teaspoons baking powder
¼ teaspoon salt
For the Crumb Topping

½ cup flour (plain or whole wheat)
½ cup brown sugar
1 teaspoon cinnamon
¼ cup butter
Instructions

Prep: Heat oven to 360°F. Grease and line a 9×5 inch loaf pan.
Make Topping: Combine flour, brown sugar, and cinnamon in a bowl. Rub in butter until crumbs form. Refrigerate.
Mix Dry Ingredients: In a large bowl, stir together all dry ingredients.
Mix Wet Ingredients: In a separate jug, combine all wet ingredients until smooth.
Assemble: Pour wet ingredients into dry, folding gently until just combined (a few lumps are okay!). Pour batter into loaf pan, top with crumb topping.
Bake: Bake 50-60 minutes, or until a toothpick comes out clean. Cool in pan for 10 minutes, then transfer to a wire rack to cool completely.

Beef stew!
Ingredients

Half a teaspoon of salt
Half teaspoon ground black pepper
1 1/2 cups beef broth
4 medium carrots, cut into slices
3 medium-sized carrots, cut into cubes
1 medium onion, chopped
1 celery stalk, chopped
1 teaspoon Worcestershire sauce
1 teaspoon ground paprika
1 minced garlic clove
1 large bay leaf
Directions
Put the meat in a slow cooker.
Mix the flour, salt, and pepper together in a small bowl. Pour over the meat and stir to coat the meat.
Add beef broth, carrots, potatoes, onion, celery, Worcestershire sauce, paprika, garlic, and bay leaf; stir until combined.
Cover and simmer until tender enough to scrape with a spoon, over low heat 8 to 12 hours, or over high heat 4 to 6 hours.
Enjoy!

Ingredients:

2 cups water
2 cups uncooked instant rice
2 (10 oz) cans chunk chicken, drained
1 (16 oz) package frozen chopped broccoli
1 lb processed cheese food, cubed
1 (10.75 oz) can condensed cream of mushroom soup
1 (10.75 oz) can condensed cream of chicken soup
1 cup milk
¼ cup butter, cubed
1 small white onion, chopped
Instructions:

Preheat & Prepare Rice:

Preheat oven to 350°F (175°C).
In a medium saucepan, bring water to a boil. Stir in instant rice, cover, and remove from heat. Let stand for 5 minutes.
Combine Ingredients:

In a 9x13-inch baking dish, mix the prepared rice, chicken, broccoli, cubed cheese, cream of mushroom and chicken soups, milk, butter, and chopped onion.
Bake & Stir:

Bake in the preheated oven for 30-35 minutes. Stir halfway through to help the cheese melt evenly.
Serve warm and enjoy this creamy, cheesy casserole—easy comfort food that’s full of flavor!
