Mexican Taco Rice Casserole 🌮🧀🍚✨
Ingredients
1 pound ground beef
1 small onion, diced
1 packet taco seasoning
⅓ cup water
1 (10-ounce) can Rotel tomatoes
1 (15-ounce) can black beans, drained
1 cup corn
2 cups cooked rice
2 cups shredded Mexican cheese blend
½ cup salsa
Chopped cilantro
Instructions
Preheat oven to 375°F (190°C).
Cook beef and onion until browned.
Drain grease.
Add taco seasoning and water.
Stir in Rotel, beans, corn, salsa, and rice.
Mix well.
Transfer to baking dish.
Top with cheese.
Bake for 20 minutes.
Garnish with cilantro and serve.

1 pound ground beef
1 onion
1 cup Sloppy Joe sauce
2 cups cheddar
1 bag frozen tater tots
½ teaspoon garlic powder
Instructions
Heat oven to 375°F.
Brown beef and onion.
Stir in sauce.
Spread into baking dish.
Add cheese.

1 can refrigerated biscuit dough
½ cup pizza sauce
1½ cups shredded mozzarella cheese
¼ cup mini pepperoni
2 tablespoons melted butter
½ teaspoon garlic powder
½ teaspoon Italian seasoning
Black olive slices for faces
Instructions
Preheat oven to 375°F (190°C).
Flatten each biscuit.
Add pizza sauce, mozzarella, and pepperoni.
Fold dough around filling and seal tightly.
Shape into teddy bear heads with small dough balls for ears.
Decorate faces using olive slices.
Brush with butter mixed with garlic powder and Italian seasoning.
Bake for 15–18 minutes until golden.
Serve with warm pizza sauce.
