This is the official page for the MSc Gastronomy programme at Edinburgh's Queen Margaret Un What's the story? What is Gastronomy?
The MSc Gastronomy at QMU is a unique programme in the UK and begins in January 2014. As instances of global and local food injustice are reported with more frequency, the dysfunction of our food system and complexity of food culture is brought to light. Reductionist approaches to solving food related issues are proving ineffective. A more holistic approach is needed, and this will be created by a
more comprehensive understanding of food and its value. Gastronomy is not just about high end food products and cooking. The 18th century godfather of Gastronomy; Brillat-Savarin, defines it as the study of all things concerning that which nourishes us. Gastronomy is the study of food, food culture and food systems; not just how food is prepared and eaten, but how it is grown, traded, considered and communicated, its value to us, and its effect on the planet and our future. Gastronomy takes seriously the question of how to understand and affect food culture, while maintaining awareness of environmental, social, physiological and economic wellbeing and the importance in celebrating good food. The MSc Gastronomy at QMU is a year long programme that aims to address these issues and cultivate a deeper understanding of food that we might effect a more positive and sustainable food culture into the future. It is ideal for anyone wishing to enhance their knowledge of food related industry, or to build on their love of food for a future career.
