Cypriot bread
Nothing fancy to see here folks, hubby craved this bread and tarama so I had to make both ❤️
He also paid me the biggest compliment and said it was like his mums bread, winning 🥇
This is what you will need
1 kilo plain flour
1 teaspoon mahlepi
1 teaspoon mastica
1 tablespoon salt
1/4 cup of olive oil
2/4 cup of milk
2 cups of warm water
2 packets of yeast mixed 1 cup of warm water, cover leave to rise.
Simply knead all the above for a good 10 mins. Cover with warm towels to rise for 1 hour.
Knead again for 5 mins and roll into loafs like in pic, slice right through to create indents.
Roll in sesame seeds.
Let rest and rise for another half hour before baking on 180 degrees for 30 mins.
Super crunchy on the outside, soft as in the middle.
Soo good to eat straight from the oven with slabs of butter 🤤

Sushi Squid
Same same but different!
Stuffed squid in tomato and red wine sauce repurposed for entree💯
What you will need
5 large squid cleaned
The filling
2 cups of rice soaked in hot water for 15 mins, strain. For the keto version substitute for cauliflower rice.
1 cup of parsley 🌿
1 small grated onion 🧅
2 cloves of garlic minced
1 grated tomato 🍅
1 tablespoon paprika
1 tablespoon vegeta stock
1 teaspoon cumin
Salt and pepper
The sauce
3 grated tomatoes
1 cup of olive oil
1/2 cup red wine optional
3 cloves garlic minced
2 cups of water
Stuff the squid with the filling and secure the end with tooth pics. Lay in the bed of sauce in deep baking dish
Cover well and bake on 180 degrees for 45 mins.

Vegetarian Pastistio (pasta bake)
Meat free Monday dinner idea 💡
This is what you will need
1 medium eggplant
1 medium sweet potato
2 large zucchini’s
3 cups of mushrooms
1 can of lentils, I like to use the dry lentils and boil them for 20 mins and strain
1 large onion
4 cloves of garlic
2 ripe tomatoes
1 cup of parsley
1 cup of crushed tomatoes
1 large cup of grated cheese, I like to use halloumi cheese
1 large packet of
Spices
1 large tablespoon of vegeta stock
1 teaspoon cumin
1 teaspoon pepper
1 tablespoon of salt
1/4 teaspoon curry powder
I blitzed all my vergies in a food processor cause I’m lazy 😞
Don’t purée them! They need to quite solid.
Start by cooking your pasta until al dente. Strain.
In a medium pot, add 1/2 cup of good olive oil, add onions and garlic and cook on medium heat for 5 mins.
Add spices and cook for 2 mins
Add vegetables and cook for 15 mins.
Lastly add 1 cup of crushed tomatoes, simmer for 10 mins, add lentils last and once off the heat, mix well.
Bechamel
125 grams of butter
2 cups of flour
1 litre of milk
Salt and pepper
1 cup of grated cheese
Start by melting butter, add flour to make your roux.
Slowly add milk on medium heat until it comes together, and keep whisking!
Once it’s starts to thicken add cheese, and cook till thick.
You can add 2 eggs at the last minute and off the eat (optional)
The layering
In a large baking dish, drizzle some olive oil, add a layer of a pasta and 1/2 cup of milk, this will keep your pasta nice and moist.
Add a sprinkle of cheese and then your vegies, add another sprinkle of cheese and top with bechamel.
Bake on 170 degrees for 45 mins.

Brownies anyone?
Probably the best brownie recipe I’ve ever used.
And I may have added some crushed violet crumble too 🐷
This is what you will need
200g unsalted butter
200 g / 1 1/4 cups dark chocolate chips
1 cup (175g) brown sugar , loosely packed
3 eggs , lightly beaten
1 tsp vanilla extract
1/2 cup (75g) plain flour
1/4 cup (30g) cocoa powder
Pinch of salt
180g/6oz dark chocolate block/bar (optional) , chopped into chunks rather than shards,
Method
* Preheat oven to 180°C/350°F (160°C fan forced).
* Spray a 20cm/8" square tin with oil and line with baking/parchment paper with overhang (Note 2).
* Place butter and chocolate chips in a heatproof bowl, microwave in 30 second bursts (takes me 1m 30 sec) until melted. Stir until smooth.
* Add sugar and vanilla, mix, then add eggs and mix well until smooth
* Add flour, cocoa and salt and stir until smooth. Stir in chopped chocolate, pour into pan.
* Bake 24 minutes for really gooey in the centre, 28 minutes

Mini tortillas
Tonight’s quick meal in under 20 minutes.
I had brain freeze on what to make my family for dinner, bit of this, bit of that and tada!
This is what you will need
1 packet of mini tortillas from
4 chicken thighs sliced thinly
1 onions diced
3 cloves of garlic
2 cups of lettuce
8 cherries tomatoes diced
1 cup of grated cheese
1 tablespoon paprika
1 teaspoon cayenne pepper
1 teaspoon cumin
1 teaspoon chilli flakes
Guacamole dip
Avacado
Half a red onion diced
5 cherrie tomatoes diced
I used my wok and started by browning the chicken in a dash of oil, add onions and spices. Cook for 10 mins on high heat.
Load up your tortillas with a little bit of lettuce, tomatoes and chicken. Place in a baking dish.
Top with grated cheese and pop them in the griller for 5 mins until cheese melts.
Add guacamole and sour cream to serve.
