Madeira Cake Tutorial 🍋

A classic Madeira cake with a light, buttery texture and a fresh touch of lemon. Follow along as we take you through the process from meringue to the finishing icing! 👩🏻‍🍳✨

Ingredients:
• Soft flour + baking powder, sifted — 248g
• Egg yolks — 5 eggs
• Lemon juice — approx. 30g
• Egg whites — 5 eggs
• Sugar — 150g
• Butter — 293g
• Sugar + lemon zest — 50g

Method:
1. Prepare the meringue by whisking the egg whites until slightly foamy, then gradually add the sugar. Increase to high speed and whisk until medium peaks form. Set aside in the chiller.
2. Cream the room-temperature butter with the lemon sugar until light and fluffy.
3. Gradually add the egg yolks and lemon juice in 3 additions, making sure each addition is fully incorporated.
4. Gradually add the sifted flour and baking powder in 3 additions. Mix only until combined — do not overmix.
5. Fold in the meringue in 3 additions, starting with ¼ of the meringue to lighten the batter.
6. Pour 500–550g of batter into the cake tin and gently smooth the surface.
7. Bake at 160°C for 35–45 minutes, or until a skewer comes out clean.
8. Prepare the icing by mixing sifted icing sugar with lemon juice.
9. Once the cake has cooled slightly, pour the icing over the top and return it to the oven at 150°C for 3 minutes to set the icing.
