What track matches a slow roast?

The ribs marinated when in a yoghurt/salt/lemon mix will tenderise meat for slow roasting.

Ethically sourced meat products that honour the whole animal is a great appreciation of the paddock to plate movement.

Big empowerment energy 🤩 no bu****it mama 💚

Ask me anything and be prepared for no filter.

A "no bu****it attitude" is an amazing thing to receive from someone.

A person who knows what they are doing or talking about, isn't willing to listen to whining or a bad attitude, and calls you out with good intentions.

Also calls out their own “bu****it” and is accountable for their actions.

Lean protein, low fat content and ethically sourced. Highly recommend to support local and reduce the carbon footprint.

All the kangaroo meat on supermarket shelves and served up in restaurants comes from kangaroos harvested from wild populations.

BBQ favourites! Mustard spiced dukka rub on prime beef rib eye steak ... from scratch.

I miss Sunday steak night at the Aussie pub. So here’s something I learnt from a South Melbourne pub I frequented.

Ingredients: mustard seeds, rock mineral salt, black pepper, cumin seeds, smoked sweet paprika, mixed herbs.

Tip: The cooked protein has to rest 10 minutes before cooking, cook 10 minutes on the high heat grill and up to 10 minutes on a warm plate.

Method to the madness:
- Crush the herbs and spices in a mortar and pestle.
- The ethical grass fed steak cut has to be at room temperature to rest the fat and protein. Lightly drizzle the steak with oil and apply the spice before, never oil the pan. You need to seal in the water content of the steak from the heat.

*It’s an tried and tested chef’s trick that l learnt working in restaurants and butchers. The cut has to absorb the oil and flavour before heat is added.
