This morning, the Zambia Institute for Tourism and Hospitality Studies (ZITHS) hosted two chefs from the State University of New York SUNY Schenectady County Community College for a culinary exchange program. The event brought together faculty, students, and industry partners. Visiting guests included Dr. Freda Brazle, Chef Kim, Chef Michael, and Dr. Steady Moono, President of SUNY Schenectady.
The ZITHS Executive Director welcomed the chefs warmly, underscoring the institute’s role as the country’s anchor for hospitality and tourism training. She remarked that “collaborations of this nature enrich our students’ learning, strengthen industry partnerships, and showcase Zambia’s cuisine as a vital part of our tourism identity.”
In his remarks, Dr. Chilufya, Director from the Ministry of Tourism, speaking on behalf of the Permanent Secretary, Mr Evans Muhanga, emphasized that Zambia’s tourism is also defined by its culinary heritage. He noted that initiatives such as this exchange “demonstrate how food can serve as a cultural bridge, enriching the visitor experience and positioning Zambia as a destination of flavours.”
The chefs were introduced to ZITHS through a guided tour of the campus, food science lab, and training kitchen, where they interacted with lecturers and students. They experienced Zambia’s culinary heritage firsthand, with traditional dishes such as ifyumbu fya kusashila, chikanda, and katapa featured during the exchange, while also sharing aspects of American indigenous cuisine by way of preparing a New York-style pizza. The highlight of the program was an interactive cooking session, where visiting chefs, faculty, and students worked side by side, blending techniques and traditions in a lively and practical setting.
A special moment of recognition was dedicated to Dr. Steady Moono, whose vision and leadership made the exchange possible. He was honoured with an award celebrating his outstanding contributions to education, his commitment to equity and student success, and his enduring dedication to Zambia.
The morning’s activities highlighted the value of culinary heritage in tourism, showing how food serves as both a cultural bridge and a tourism product. By engaging directly with students, industry partners, and international collaborators, the event strengthened ties, enriched the learning experience, and celebrated Zambia’s cuisine as a vital part of its tourism offering.

ZITHS was proud to partner with Nyika Women’s Green Foundation for the just ended Maramba Green Marathon reaffirming our commitment to sustainable tourism and human capital development.

Over 1,500 runners from Zambia, Zimbabwe, and Botswana took part in the race, creating a powerful platform for regional collaboration and environmental awareness.

Beyond the finish line, ZITHS joined the tree planting exercise at Booma Women’s Cooperative in Mukuni. The event was graced by Kazungula District Commissioner Mr. Elias Siamibila and Livingstone Town Clerk Madam Sombo Kawilila.

In Livingstone, we leveraged the marathon to stamp our presence and advance our mandate by promoting the ZITHS Livingstone Satellite Campus behind Dambwa North Market. We also launched awareness for our In-Service Training & Certification Programme designed for tourism professionals with industry experience but no formal qualifications.

This partnership reflects ZITHS’ dual commitment: driving green action while building tourism skills that matter. As we expand into Livingstone, we remain dedicated to raising visibility for both our Lusaka and Livingstone campuses and ensuring Zambia’s tourism workforce is qualified, competitive, and future-ready.

In line with its mandate to develop human capital for the tourism and hospitality sector through education, skills training, research, and industry collaboration, the Zambia Institute for Tourism and Hospitality Studies (ZITHS), led by the Executive Director together with the Business Development Team, engaged various tourism and hospitality establishments as part of an ongoing industry engagement initiative.
The engagements focused on strengthening collaboration between industry and academia and responding directly to the evolving needs of the tourism and hospitality sector.
As part of this initiative, ZITHS is rolling out an In-Service Training and Certification Programme aimed at providing accessible, industry-responsive training for employees currently working in the sector. The programme is specifically designed to support staff who have valuable industry experience and prior learning but have not yet attained formal certification.
To ensure convenience and greater industry participation, ZITHS will provide training and certification services directly within establishments through tailor-made, in-house programmes curated to meet the specific operational needs of each organisation.
ZITHS is therefore encouraging all tourism and hospitality professionals who are already serving in the industry without formal certification to take advantage of this opportunity to enhance their qualifications, strengthen their professional standing, and contribute to elevating service standards within the sector.
Through these collaborations, ZITHS remains committed to building a competent, competitive, and future-ready tourism and hospitality workforce for Zambia and the region.
