A beautiful morning for a simple yet brilliant recipe using a pot of gold, Natural Flu Booster.
The past few weeks have seen an increase in coughs and flus. The usual home remedies have helped to an extent but I came across a homemade product, Natural Flu Booster which is nothing less than a pot of gold. It can be consumed as is, in tea or added to some porridge. To make it more fun for my family, I decided to add it to my muffin mix and boy was it a straight win!
Ingredients
- 3 cups cake flour
- 3 teaspoons baking powder
- 2 cups mabisi (for extra softness)
- 3 eggs
- 1/2 castor sugar
- 1 and 1/2 cup butter
- 1 teaspoon mint essence
- 5 tablespoons Natural Flu Booster

Easy like a Saturday afternoon.
Lunch consists of some white aubergine (my son calls it watermelon vegetable 😅), dried pumpkin leaves cooked with pounded groundnuts and some grilled pork chop.

Peanut butter muffins with peanut butter frosting showcasing your favorite local brand, ZamSpread Peanut Butter.
Here is what you will need.
- 2 cups cake flour
- 2 teaspoons baking powder
- 1 cup granulated sugar
- 1 cup butter
- 4 eggs
- 1 and a half cup milk mixed with 5tablespoons of ZAM SPREAD Peanut Butter
- Half cup grated carrots
- 1 teaspoon mixed spice
- Half cup fruit mix
Method
- Sieve and mix the flour, baking powder and mixed spice
- Beat butter and add the granulated sugar. Add the eggs one or two at a time till mixed
- Start adding the flour mix slowly alternating with the milk and peanut butter combo until combined. Be mindful not to overbeat the mixture.
- Finally add the grated carrots, fruit mix and spoon out onto your lined muffin tin
Bake for 20mins or until a skewer comes out clean
Frosting
- 1 cup milk
- 2 cups fino whip
- 5 tablespoons ZamSpread Peanut Butter
Beat the milk till frothy and add the fino whip in bits till done. Add the peanut butter and combine. Pipe your muffins as desired

Hello fam,
One thing I love about African cuisine is how diverse it is infusing everyday ingredients to make tasteful meals. Here is a West African inspired meal using ground beef and my favorite peanut butter, ZAM SPREAD Peanut Butter.
Ingredients
- Ground beef
- Mixed veggies (I used carrots and green beans)
- Finely chopped onions and garlic cloves
- Grated tomatoes
- Chili powder or chili oil (optional but highly recommended)
- Soy sauce and spices to season
Method
Heat up a bit of oil on your saucepan and add the ground beef once hot. Break it and turn it till browned and cooked.
Add salt and spices of choice to your cooked mince and then add onions and garlic till sautéed. Add the soy sauce, the grated tomatoes and combine well till done.
Finally add your mixed vegetables and cook ensuring the vegetables are still firm.
Make a paste with a scoop or two of ZamSpread Peanut Butter and hot water (ratio will vary depending on how much ground beef you are preparing) and add to the ground beef. Mix well. Add your chili and simmer.
Serve with hot spaghetti or noddles.

Weekends are for family meals and what better meal than hot nshima, some beef liver and a vegetable that is an undeniable labor of love, katapa (cassava leaves) mixed with the smooth and family favorite, ZamSpread Peanut Butter.
Wash, pound and cook your cassava leaves till done. In a separate pot, fry some tomatoes and onions and add your cooked vegetables after which add a generous portion of ZAM SPREAD Peanut Butter and mix. Serve with some nshima or preferred starch and protein of choice.

Back to school season also means every day is extraordinary 😅 and last week was no exception as the kids had a traditional day with the request to go with traditional food (I still added an all time favorite just in case the morale to eat traditional foods waned away while at school).

A favorite in many homes, is often on the menu at traditional ceremonies, and tastes even better with the smoothest and proudly locally produced peanut butter, ZAM SPREAD Peanut Butter.
