Chicken Pasta Bake – Cape Malay Cooking & Other Delights – Salwaa Smith
Quick and easy pasta bake, the kids will love you for this!
Serves 4
200g pasta, any type
100g chicken (cooked), chopped
100g frozen peas
100g frozen sweetcorn
2 tsp dried mixed herbs
50 - 100g grated cheese of choice
White sauce
1 ½ tbsp butter
2 tbsp cake flour
1 ¼ cup milk
Method
To make the white sauce, melt the butter in a saucepan on a low heat. Stir in the flour and cook for a couple of minutes, stirring constantly, until you have a smooth paste. Slowly pour the milk in, stirring all the time. Bring to the boil, stirring with a whisk, until thickened. Add seasoning (black pepper, salt, mustard, grated nutmeg) to taste and stir well.
Preheat oven 180'C. Cook the pasta according to the packet and place in an oven proof dish. Cook the chicken (if not already cooked) and add to the pasta mix. Add the sweetcorn, peas and herbs. Pour the white sauce in, sprinkle some grated cheese on top and cook in the oven for about 30 minutes.
Cook’s Tip:
Use frozen mix veg instead of the peas and sweetcorn. Melt 50g grated cheese into the white sauce
