It’s time. The students are drawing their very first espresso shot — following a precise, professional sequence to ensure quality and consistency.
Here’s the step-by-step process:
1️⃣ Dose the Coffee
Fill the portafilter with the correct amount of freshly ground coffee.
2️⃣ Weigh the Dose
Place it on the scale to confirm it is within specification. Precision matters.
3️⃣ Settle the Grounds
Tap the portafilter twice gently to distribute and settle the coffee evenly in the basket.
4️⃣ Tamp with Precision
Compress the coffee with consistent, firm pressure to create the perfect puck.
5️⃣ Check & Clean
Ensure the surface is level, clean the rim of the portafilter, and prepare it for insertion.
6️⃣ Lock In
Secure the portafilter firmly into the espresso machine.
7️⃣ Position the Cup
Place the espresso cup correctly under the spout.
8️⃣ Begin Extraction
Start the shot and watch carefully as the espresso begins to flow.
9️⃣ Time & Yield
Ensure the correct amount of espresso is extracted within the allotted time for a balanced shot.
🔟 Final Weigh-In
Weigh the finished espresso to confirm it meets the required specifications.

Our student baristas are doing a full dry run — walking through the entire process of drawing an espresso from start to finish.
Why a dry run? Because repetition builds confidence. By practicing the exact sequence step-by-step, they commit the workflow to memory.
Later, when they’re working with real coffee and pulling live shots, they can focus fully on the technical precision:
