Cheffing academy is an educational program for novice cooks and kids in developing their basic baking and cooking skills through active learning.

This program is aimed at children from aged 7 years onwards in mastering basic techniques and culinary skills. Our weekly part – time course is part of a 1 year program to ensure that students work together in a fun hands on environment, to educate, inspire and stir up creativity. The Cheffing Academy also offers single session courses throughout the year.

Making flawless pastry is a skill to be perfected, but once mastered it is a simple way of transforming a dish into a masterpiece. Pastry is a time consuming process but in the current economic climate we are baking more at home. Over the next few weeks the Chefing Academy will be hosting Michelin star trained Pastry Chef/confectioner Anwar Amode Hoosen with 12 years experience in hotel and catering industry both locally and internationally.

Lesson 1: Making Puff pastry
incorporating butter, rolling and folding, turning and resting, cutting basic shapes.
Rolling palmiers, vol au vents, pitiviers, mille- feuille, and fillings.
