The difference between using "much" and "many" is whether the noun being described is countable or non-countable:
Much
Use "much" to describe non-countable nouns, or mass nouns, like "juice", "rice", "patience", and "happiness". The noun will always be singular when using "much". For example, "I don't have much time left to finish the assignment".
Many
Use "many" to describe countable nouns, or nouns that can be counted, like "books", "ideas", "leaves", and "shoes". The noun will always be plural when using "many". For example, "They own many houses".
