Level tamp = legendary espresso.

Here’s why straight tamping matters & how to nail it every time ☕✨

📋Why it’s non-negotiable:
Water at 9 bars always takes the path of least resistance. A tilted or uneven puck creates weak spots → channeling happens → one side gushes fast (under-extracted sour notes), the other stays dry (over-extracted bitterness).

Result? Muddy, unbalanced shots instead of that sweet, syrupy flow with rich crema.

➡️The fix starts with a dead-straight tamp:
Grip like a doorknob – thumb & index finger on the base for control, wrist neutral & straight.
Elbow ~90°, body aligned over the portafilter (no leaning or twisting).

Press straight down (perpendicular to the basket) with even arm pressure – aim to press until there is resistance.

Stop when the grounds are fully compressed (you can’t really over-tamp).
No twisting, tapping sides mid-tamp, or wrist flicks – that introduces tilt & inconsistency.

Pro tip: After distribution (WDT or leveling tool), check your puck is flat before tamping. A level surface + straight tamp = even resistance = balanced extraction every shot.

Your grinder has a bigger impact on espresso quality than your espresso machine.

A cheap grinder produces uneven particle sizes, which means:

• some coffee over-extracts (bitter)
• some coffee under-extracts (sour)
• baristas struggle to dial in espresso
• every shot tastes different

That’s why professional cafés invest heavily in their grinder systems.

Great grinders produce consistent particle sizes, which leads to:

✔ balanced espresso
✔ better flavor clarity
✔ easier dialing in
✔ faster workflow during busy hours

In many cafés, the grinder is actually the most important piece of coffee equipment behind the bar.
