An institute for the representation of Craft Spirit Producers and Craft Distillers in Southern Africa. What is Craft Distilling?
Craft Distilling means many things to many people. However, to promote, protect, represent and support the producers of Craft Spirits, well defined definitions are required for "Craft Spirits", "Craft Producer", "Craft Distillery", "Farm-to-Bottle Craft Distillery", and other Craft Distilling related terminologies. In short, the following SACDI draft definitions are applied:
CRAFT SPIRITS DEFINI
TION
Craft Spirits are spirits produced by:
• Any licensed and SARS registered Micro-Liquor Manufacturer (or local equivalent in neighbouring countries) that produces a Spirit Product
• Where the majority shareholding does not rest, directly or indirectly, with a public company, and the owner(s) are involved in the operation or the management of the production facility
• Where the production process does not employ integrated computer based automated equipment (full automation)
CRAFT SPIRIT PRODUCER DEFINITION
A Craft Spirit Producer is:
• Any licensed and SARS registered Micro-Liquor Manufacturer (or local equivalent in neighbouring countries) that produces a Spirit Product
• Where the majority shareholding does not rest, directly or indirectly, with a public company, and the owner(s) are involved in the operation or the management of the production facility
• Where the production process does not employ integrated computer based automated equipment (full automation)
• Which produces small batches no larger than 2000 lt
• Which has a total annual production of less than 380 000 litres of Absolute Alcohol (i.e. less than 20% of that of what the law allows for Micro-Liquor Manufacturers)
CRAFT DISTILLERY DEFINITION
A Craft Distillery isr:
• Any licensed and SARS registered Micro-Liquor Manufacturer (or local equivalent in neighbouring countries) that produces a Spirit Product
• Where the majority shareholding does not rest, directly or indirectly, with a public company, and the owner(s) are involved in the operation or the management of the production facility
• Where the production process does not employ integrated computer based automated equipment (full automation)
• Which produces small batches in a still with a capacity no larger than 1000 lt per unit
• Which has a total annual production of less than 380 000 litres of Absolute Alcohol (i.e. less than 20% of that of what the law allows for Micro-Liquor Manufacturers)
• Which produces Spirits from Fermentation – either purchased or self-made
• Where all phases of the production process is executed and controlled by the Producer (distillation, spirit enhancement and bottling)
FARM-TO-BOTTLE CRAFT DISTILLERY DEFINITION
A Farm-to-Bottle Craft Distillery is a Spirit Producer:
• That complies with the SACDI definition of a Craft Distillery
• That grows the majority (more than 50%) of the raw material used in their fermentations, on the premises where the Distillery is located
OR
• Produces its own fermentations from locally sourced raw materials
