I like to choose my own produce when I shop. Expiry dates are especially important and so when I got my local supermarket to deliver some staples the other day, they sent me 2 litres of milk that was sour 😳.

I started googling and found so many things to do with sour milk. So here is what I attempted: a form of Irish soda bread, chocolate cake and homemade ricotta!

Super excited with the outcome of all of my experiments 👏🏻

Lockdown has given me more time in the kitchen to try new things (when I’m not busy doing all the other more necessary chores and taking on my new teaching role for my two boys 😆). Use this time to do the things that bring you happiness and calm 🙏🏻

Joyce has been enjoying private lessons for the past 5 weeks. We meet once a week for a morning of learning, cooking and tasting together and I’m thrilled to have spent the time getting to know her. She has “graduated” feeling more confident and ready to take on any recipe and know she can do it.

Fabulous morning spent at Banks Kitchen Shop - our final lesson in our ❤️ Best of the Basics ❤️ course.

We hustled and produced 7 magnificent dishes including challah bread from scratch and some hands-on time with the dough and plaiting techniques

On the menu today:
• barbecue lamb
• couscous
• crispy smashed baby potatoes
• teriyaki salmon
• broccoli & cauliflower salad
• chocolate cake with a moreish chocolate frosting
• chocolate crunch biscuits
• homemade challah

Monday easy-does-it inspiration — airfryer chicken nuggets... moist chicken breast strips with a challah crumb - my kids gave it a thumbs up 👍🏻👍🏻👍🏻

Simply dip in seasoned flour, then an egg wash (with a tablespoon oil instead of water) and finally a coating of seasoned fresh bread crumbs. Cook on highest temp (200degC) in air fryer for 8-10 minutes ✅

Today was our 1st of two lessons in our “Best of our Basics” course at Banks Kitchen Shop Sea Point.

Time is precious and so we condensed our 4 week course to offer 2 jam-packed lessons with all of our family favourites! ❤️

It was a fabulous morning with full class of eager students! Can’t wait for next week! 😊
