Sylvia Reynoso Gala Culinary Whether you've been cooking for 30 years or 30 minutes, we offer workshops with your tastes in mind. Our late father, architect and builder Jose L.

Reynoso loved everything in life, including great tasting, well presented food. Our 88 year old mother, Africa J. Valdes of Angeles, Pampanga, provided all that, including our grandfather’s cook, Apong Metyang, who later stayed with us until her death. Both women were great teachers-they simplified the seemingly difficult, used only the very best ingredients available locally with the belief that

to get the best results, one must likewise put in only the best, and most importantly, let us 9 children smell, feel, and touch what was to be cooked or baked that day. Children absorb anything taught to them, most especially if one made it fun and exciting. The kitchen became our classroom and playground, and it did not come as a surprise to our parents when all of us opted to go into the food business. We were sent to the best cooking schools abroad. In 1963, Erlinda (Leni) and Edna opened the Reynoso Cooking School in Malate. Leno got married and went to the United States with her family. The “cooking bug” never left her and attended more schools there. To date, she is the only certified Wilton , Chicago USA instructor in the Philippines , while Edna and her family operate several restaurants in Baguio City . On February 9, 1970, our ever supportive father allowed me to teach everything I learned from abroad in our kitchen on 10 Ipil Road; Forbes Park, Makati. Our students came from far and near, from 6 to 70 years old. Courses taught ranged from children’s cooking and Baking, Family Home Cooking, Restaurant and Party Fare Courses, Bakeshop Cakes and Pastries, Bread baking. In 1983, we moved to a more accessible location, Shaw Blvd ; Pasig and our 2 children, Morella and Ernest, after graduating from Brent International School , studied the culinary arts abroad. Morella was valedictorian at the IHMES, a hotel and restaurant school in Isle of Man , United Kingdom , and also studied at Le Cordon Bleu Cooking School in London , England , while Ernest has a Full Course diploma from The Thai Cooking School at the Oriental Hotel, Bangkok , Thailand . We also took several courses on Asian and International cuisine in different cooking schools in Hong Kong . Our goal is to teach as many “Money Making Courses at Home” ion the firm belief that peace in our country will only come with economic prosperity. As our late father would always say: “Pag naturuan mo ang isa, pati apo niya, makikinabang.” (When you impart your knowledge to one, even his/her grandchildren will benefit from it). To all those who trusted us, our students, their families, food companies, media and most especially to the Lord, thank you for allowing us to share this dream with you for the past 35 years.

Recipe of the Week: CHICKEN DRUMSTICKS WRAPPED IN PANDAN LEAVES
Recipe by: Sylvia & Ernest Reynoso Gala
C/O Woman Today

Ingredients:

8 pcs. Chicken Drumsticks
1-1/2 tsps. liquid seasoning
1⁄4 tsp. pepper
1 tbsp. calamansi juice
8 rashers (pieces) Honeycured Bacon
8 pcs. mature pandan leaves
8 pcs. strong wooden toothpicks
2 cups Nutri-Oil or Cooking oil

Procedure:

1. To prepare drumsticks: In a bowl, marinate the chicken in liquid seasoning, pepper and calamansi juice for 1 up to 8 hours in the refrigerator (overnight is best). Cover with cling wrap.

2. When ready to cook chicken, drain then wrap each drumstick with bacon, then pandan leaf. Secure with toothpick.

3. Heat oil in a medium fry pan. When hot, turn heat to medium then add chicken (prepare a cover for yourself just in case it splatters; do not cover pan as it will prevent the chicken from getting crispy).

4. Cook for 8 to 9 minutes. Drain on paper towels. Carefully remove toothpick.

5. Serve with bottled sweet chili sauce or catsup, if desired. Yields 3 to 6 servings.

Recipe of the Week: Heavenly Fruit Salad

INGREDIENTS:
½ cup MAGNOLIA MAYO
½ cup MAGNOLIA ALL PURPOSE CREAM
1 cup orange sections
1 banana, sliced – 1 cup sliced lacatan
1 can (8 oz.) pineapple chunks, drained – 1 cup
1 cup miniature marshmallows
1 cup Fresh Buco Strips

PREPARATION:
1. Mix MAGNOLIA MAYO and MAGNOLIA ALL PURPOSE CREAM in large bowl.
2. Stir in fruit and marshmallows. Refrigerate several hours or overnight.
3. Top with coconut and cherries with stem.
4. Serves 6.

Recipe for the Weekend: Mussels with White Wine

I. Prepare 1 – 2 quarts microwavable bowl. Or any bowl for presentation. One French Baquette sliced into 12.

II. INGREDIENTS:

2 dozen frozen New Zealand Mussels on a half shell-thawed
¼ cup MAGNOLIA GOLD BUTTER SALTED, softened
¼ cup crushed garlic
¼ cup chopped spring onions
1 tsp rock salt
½ tsp pepper
1 cup dry white wine

III. PROCEDURE:

1) Mix the MAGNOLIA GOLD BUTTER SALTED, garlic spring onions, salt pepper, white wine in the prepared bowl. Arrange mussels. Cover with cling.
2) Set microwave oven. Microwave on 100% power 5 minutes. Transfer to serving bowl. Serve with the bread.
3) NOTE: If using fresh mussels, scrub each and de-beard. Microwave with the other ingredients on 100% power 10 minutes or until all shells are open. Discard those that don’t open.

Recipe of the Week: Garlic Roast Chicken with Herbed Bread Stuffing

Ingredients:
1 whole dressed MAGNOLIA CHICKEN (approximately 1.2 kgs.)
1 cup STAR GARLIC MARGARINE
1 cup diced celery
1 cup chopped onions
1 cup diced carrots
½ cup button mushrooms, quartered
2 cup day-old bread (packed), cubed and crusts removed
½ tsp sage
½ tsp thyme
½ tsp dried marjoram
¼ tsp salt
1/8 tsp pepper
1 tbsp MAGNOLIA ALL PURPOSE FLOUR
1/3 cup chicken stock
Salt and pepper to taste

Procedure:
Preheat oven to 350F. Reserve liver and giblet package for gravy. Wash chicken with water and pat dry with paper towel. Rub chicken with ½ cup Star Margarine on the skin and underneath the skin. Set aside.

Sauté celery, onions, carrots and button mushrooms in the remaining ½ cup Star Margarine. Add cubed bread and season with sage, thyme, marjoram, salt and pepper. Toss until mixture is heated through.

Stuff bread mixture into the cavity of chicken. Bake chicken for 1 ½ -2 hours or until done. When the chicken is cooked, get the pan juices. Mix pan juices with the finely chopped liver and giblets and boil for about 5 minutes. Whisk in MAGNOLIA ALL PURPOSE FLOUR and allow to thicken. Add chicken stock and simmer until thickens. Season with salt and pepper to taste. Serves 6 to 8.

Recipe for the Weekend: TOCINO AND CHINESE SAUSAGE FRIED RICE

1 pack (500 g) MAGNOLIA CHICKEN TIMPLADOS TOCINO, drained
2 pc (100 g) Chinese sausage, sliced thinly
2 tbsp cooking oil
6 cloves garlic, finely crushed
3 pc MAGNOLIA BROWN EGGS
1 pack (200 g) frozen mixed veggies, thawed
6 cups cooked rice
1/2 tsp iodized fine salt

Procedure:
1. Slice tocino into strips. Set aside.
2. In a large pan or wok, cook and brown sausage in its own oil. Set aside.
3. In the same pan, add oil and fry tocino in batches. Move to side and then sauté garlic
until sticky. Mix with tocino and add back sausage.
4. Make a well in the center and add eggs. When almost set, scramble, and mix with tocino
mixture. Add mixed veggies and then add rice. Mix well.

Makes 7 servings.
(Yield: 7-1/2 cups/1 cup per serving)

Recipe for the Weekend: Juicy Burgers

1 kilo ground beef
1/2 cup oatmeal soaked in 1/2 cup fresh milk
1 cup chopped white onion
2 BROWN eggs
2 teaspoons rock salt
1 teaspoon pepper
10 hamburger or kaiser buns

For garnish:
tomato slices

Procedure:
Mix together the ground beef, oatmeal, onion, eggs, rock salt, and pepper.

Shape into 10 patties using 1/2 cup measuring cup. Flatten slightly.

Heat a flat frying pan or charcoal grill. Brush with oil. Cook the burgers on medium heat to desired doneness.

If burgers are charcoal grilled, make sure burgers are placed six to 12 inches above the coals.

To assemble:
Slice 10 hamburger or Kaiser Buns crosswise. Put tomato slice, and the burger. OPTION ADD THIN SLICES OF CHEESE.

Recipe of the Week: Oriental Spring Rolls with Sweet Chili Sauce

24 lumpia wrapper
1 eggwhite
prepare 1 brush to seal the lumpia

For the lumpia filling:

1/2 package kani, about 8 pcs. (Japanese crabsticks available in
the frozen section of the supermarket),remove plastic & pull apart
with your fingers

1 (184 gms.) can hot & spicy tuna, do not drain

1 firm tofu, cut into 1/4-inch cubes

1/4 cup spring onions (sibuyas na mura)

1 tsp. rock salt

toss in 1/4 cup mongo sprouts

Put 1 tablespoon filling into 24 lumpia wrappers. Roll tightly and seal with eggwhite. Deep fry in oil. Drain on paper towels. Cut and serve. Top with chili sauce.
