Loads of apples to use up ? This easy chutney can be eaten within a month or so- plus keeps for several years !
Apple Ginger and date Chutney
3 lbs – 1.5 kgs Bramley Apples cored and sliced
2 sliced large garlic cloves
8 fl ozs – 250mls cider vinegar –can use any vinegar
1.5 lbs – 750g Granulated sugar
9 ozs- 250g chopped dates
4 ozs -110 g sultanas or raisins
2 oz – 50g fresh ginger root- peeled and chopped v small
½ tsp each of salt and Allspice, plus a ¼ tsp Cayenne pepper
Place the apples into a large pan with the vinegar and the garlic, simmer gently until the apples are cooked down into a mush –use a potato masher! Stir in all the other ingredients, and keep stirring to dissolve all the sugar, then cook about 20 -25 minutes, stirring every now and again. The chutney will become thick and sticky and is then ready to pot into hot sterilized glass jars, and sealed
This Chutney can be eaten after 2 -3 weeks
