Banh Xeo (Vietnamese Sizzling Crispy Pancake)
While Pho, Banh Mi and now, Bun Cha take the spotlight in Vietnamese cuisine, but everyone in Vietnam is familiar, with one cake widely called “Banh Xeo”. Banh Xeo, literally means “sizzling cake”, named for the sizzling sound made when rice batter is poured into a frying hot pan and no one can remember how long Banh Xeo has been presented in Vietnam’s southern region.
Banh Xeo is a crêpe made from rice flour and coconut milk colored with turmeric and packed with a standard filling of mung bean paste, shell-on prawns, bean sprouts, and slices of boiled pork. Banh Xeo is special because people have to use their hands to tear pieces off. So when we eat Banh Xeo, cut it into manageable slices, roll it up in mustard or lettuce leaves, basil, perilla, fish mint, mango leaves and dip it in the well-mixed fish sauce.
