Follow the smoke. Around lunchtime, small grills on Hanoi pavements start fanning charcoal – and the whole street smells of caramelised pork. 🔥
🍜 Bún chả: grilled pork patties and pork belly in a sweet-sour dipping broth, with cold rice noodles and a basket of fresh herbs.
📍 Where: small family shops all over Hanoi – look for a charcoal grill out front.
⏰ When: lunch, roughly 11am–2pm. Many shops sell out early.
💵 Around 40,000–70,000 VND a serving.
🗣 Order: "Cho tôi một suất bún chả" – add "thêm nem" for crispy spring rolls.
🌱 Eat green: sit down and eat in. Takeaway bún chả comes in a pile of plastic bags.

Nha Trang's favourite breakfast isn't on most travel lists – and that's a shame.

🐟 Bún chả cá: rice noodles, a light fish broth and springy fish cakes made from the morning's catch.
📍 Where: local markets and street corners around Nha Trang city centre, mostly before 10am.
💵 Around 35,000–50,000 VND a bowl.
🗣 Order: "Một tô bún chả cá" – add "thêm sứa" if you want jellyfish on top.
🌊 Eat green: this dish only exists because the bay is healthy. Skip the plastic straw with your iced tea.

Vị Nhà Quê has a new name: Eat Green Vietnam 🌿

Same family. Same Nha Trang kitchen. A bigger table.

Vị Nhà Quê began in Nha Trang as a family kitchen, and as a community of Vietnamese women who cook, trade and grow small food businesses together. That taste of home is still the heart of everything we share.

Now we're opening the door to travellers from all over the world.

🍜 What it is: rice noodles in a clear beef broth simmered for hours with star anise, cinnamon and charred ginger.
📍 Where: Hanoi's Old Quarter – look for tiny shops with just one dish on the sign.

Theo nhà Trung Quốc học David Thomas, chìa khóa để làm ăn thành công với người Hoa chính là... uống trà! Chính xác hơn là 3 tách trà.

Họ thích tìm hiểu đối tác làm ăn. Điều đó rất quan trọng. Họ phải hiểu và thích những giá trị, cách hành xử và tác phong của người liên quan, nếu lỡ không thích, họ sẽ không làm ăn với người đó.

"Ba tách trà" là một phương thức đơn giản nhưng lại khá hiệu quả, theo kinh nghiệm của nhà Trung Quốc học. Nó có thể được tóm tắt như sau:

1. Tách trà thứ nhất: Là cơ hội đầu tiên để những người xa lạ gặp gỡ. Đây không phải là lúc thảo luận công việc, ý tưởng làm ăn hay hợp đồng. Đây là khoảng thời gian để tạo ấn tượng đầu tiên, để hiểu người mới quen nghĩ gì, mối quan tâm, văn hóa, môi trường làm ăn của họ ra sao...

2. Tách trà thứ hai: Hai bên hiểu về nhau thêm một chút, trở thành "bạn bè". Lần gặp lại này củng cố cảm giác của hai bên dành cho nhau và ý định lâu dài của mỗi bên. Nói cách khác, tách trà này sẽ giúp mối quan hệ tiến về phía trước. Ở giai đoạn này, nếu mọi thứ suôn sẻ, sự an tâm và lòng tin đã bắt đầu tăng.

3. Tách trà thứ ba: Sẽ đưa mối quan hệ lên tầm mức tiếp theo. Ở giai đoạn này mọi người cảm thấy hoàn toàn thoải mái với nhau, lòng tin đã được thiết lập. Đây chính là lúc bàn chuyện làm ăn.
