1. GENERAL INFORMATIONS:
Coffee trees appeared in Vietnam from the 19th century. Over a long period of existence and strong development, along with suitable climate, wind, topography and soil conditions, Vietnam ranks 2nd in the world in coffee production, just behind Brazil. The International Coffee Organization informed that Vietnam's coffee exports about 25 million bags / year with an average value of $ 3 billion.
When referring to the coffee growing lands in Vietnam, first of all to mention the Central Highlands provinces with famous coffee growing areas such as Cau Dat, Nui Min, Tram Hanh (Lam D**g) and especially Buon Ma Thuot ( Dak Lak).
2. HOW MANY KINDS OF COFFEE IN VIETNAM?
There are 2 popular kinds of Coffee in Vietnam
* ARABICA COFFEE
- This is a kind of coffee with slightly long beans, grown at an altitude of over 600m (in Vietnam mainly grown in Lam D**g).
- Arabica coffee is harvested, then fermented (soaked in water to bloom ...) and then washed and dried. So Arabica taste slightly sour. This is also considered a distinctive feature of this coffee. People often compare that sour taste like when we eat lemon, it will be very sour. But immediately saw the bitter taste of the peel. The way to feel the sour taste of coffee is the same.
* ROBUSTA COFFEE
- This is grown at an altitude of less than 600m, tropical climate, compared to sea level with a cool climate, a lot of rain, so it is very suitable for Robusta coffee so in Vietnam, this type accounts for more than 90%
- The seeds are smaller than Arabica, and are dried directly. Not fermentation. Bitter taste predominates. This drink is more intense.
3. HOW ARE THE EXPORT STANDAND OF VIETNAMESE COFFEE:
The quality of green coffee is classified and approved according to the TCVN 4193: 2001 process. The first is to take a sample for approval. Once the sample is taken, an analysis will be performed - determine if the standard is based on defects in the sample coffee bean. The important criteria include: black seeds, broken, mold, impurities, particle size ... Based on the number of defects, we will get the ranking results.

TOP 7 LARGEST COFFEE EXPORTING COUNTRIES IN THE WORLD 2020
1. Brazil
Brazil is one of the top coffee exporting countries in the world. In 2016, Brazil produced 2,590,000 tons of coffee. This result is not really surprising, as Brazil has always been at the top of the list of most advanced coffee producing countries for over 150 years.
2. Vietnam:

However, in Vietnam, traditional brewed coffee is medium roasted and without chicory flavor.
3. Colombia
Colombia is famous for its coffee quality, especially Arabian coffees that are sweeter and less bitter than Robusta beans.
4. Indonesia:
Indonesia's most famous coffee specialty is kopi luwak. This is the most expensive coffee in the world because it is harvested from the manure of weasels living in the tropical forests through a unique intensive farming process.
5. Ethiopia:
Ethiopia is considered the hometown of Arabica to win the fifth position in the top coffee exporting countries in the world.
6. Honduras
Returning to Central America, Honduras ahead of India and ends in sixth place. Honduras has six distinct coffee growing regions, each producing coffee with different specifications.
7. India
Indian coffee is known to be grown in shade, in rainy conditions, and is often grown with spices such as cardamom and cinnamon to give the coffee a spicy and flavorful flavor.

MOCHI CAKE MAKE FROM GLUTINOUS RICE FLOUR & JAPONICA RICE FLOUR
INGREDIENTS FOR MAKING MOCHI CAKES
- 110g glutinous rice flour
- 20g of Japonica rice flour
- 10g vegetable oil
- 45g sugar
- Water
- 1.5 teaspoons of main roasted glutinous powder and 1.5 teaspoons of ground sugar to make coat dough
- 150g red beans
- 20g coconut milk
- 20-25g sugar
- Salt.
HOW TO MAKE MOCHI CAKE:
STEP 1: Make mochi crust
- Sift glutinous rice flour, rice flour, sugar into the bowl Add 100ml of water and vegetable oil, stir until the powder dissolves. Strain through a sieve to remove debris.
- Ripe dough in a bowl, let cool. When the dough has cooled down, use a sharp knife to divide the dough into parts, about 27 - 29g each.
STEP 2: Making the cake
- Making the red bean mochi cake: Soak the red beans 1-2 hours to soften, then rinse, put in a pot, add coconut milk and add a little water and cook thoroughly. When the beans are cooled down, use a spoon to puree or put it in a blender. In the process of puree, add a little vanilla, sugar and salt to taste. Red beans are pureed and whipped, then divided into small parts, rounded.
STEP 3: Shape the mochi cake
Mix 1.5 tablespoons of cooked glutinous rice powder with 1.5 teaspoons of crushed white sugar to make the dough.
- When the dough is still lukewarm, start making the cake. Prepare a thin cellophane piece, put the powder in the middle, use another piece of glossy paper to press the dough to flatten out, then put in the middle, wrap, round. Roll the dough through the coat dough, brush off the dough, do until the dough is gone and the cake filling.
