SPECIALTY COFFEE IS NO LONGER A NICHE?
A year ago, when we took part in this conference, the biggest questions we kept hearing were: Can specialty coffee move beyond being just a trend? And how do we stabilize coffee supply in a time of constant change: not only in price and quality, but across the entire farming ecosystem?
Now, in 2026, the answers are becoming clearer.
The 2025–2026 harvest marks a significant step forward for us. Compared to the previous season, we have improved, not just in scale, but in consistency and depth of production.
More than 10 specialty-grade coffees have been developed, with increasingly stable output. Most importantly, we made a conscious decision to stay focused on a clear direction: controlled production and sustainable farming method, rather than chasing volume or short-term trends.
What surprised us most was not the market growth, but the level of genuine curiosity about coffee origins and production.
At events, more and more people approached us with thoughtful questions about sustainable farming, processing methods, and how a coffee bean evolves from soil to cup.
Another encouraging sign is the growing connection between farms and consumers.
Over the past year, we have welcomed more than 100 volunteers for learning and exchange, hosted multiple visiting groups interested in the farm-to-cup model, and seen steady growth in orders, positioning ourselves as a reliable farmer producer of both consistent volume and distinctive quality.
Looking at the bigger picture, Vietnam’s specialty coffee scene is more vibrant than ever.
But more importantly, consumers are no longer focused solely on taste, they are beginning to care about the entire journey behind each cup.
In that sense, specialty coffee is no longer a “niche.”
It is gradually becoming a new standard - where quality, transparency, and sustainability are expected.
We would like to thank everyone who has been part of this journey, from farmers and industry peers to every guest who visited, asked questions, and shared conversations.

Place 1 & 2 in Best of Robusta Gia Lai 2026!
This was a huge surprise for us, esspecially because it's our second coffee production season. 5 months of hard work, running night shifts, flipping the coffee, tasting weird fermentations, crying over failed batches, we got rewarded with this price.
Special thanks goes to our team at Fair Farm, Phung Ha Long (for clearing the road in admin, finance, structure, finale product, marketing, and more), Hong Qiu(for all the roasts you had to do and to deal with a brother who can't organize well), Mother and Father (to believe and support in our project), Yannikbergmann (for bringing structure, system and a lot of love in), Nguyen Thinh (as our beloved and strict teacher, haha), Hòa Nguyễn Green Bean (our sensory teacher and strong supporter to push Gia Lais Robusta up), to all our Volunteers who helped us in the season (thank you for getting through the long hours) and for sure all our friends who spread the news about us and support our project.
We will try our best to move on and have an impact.

Chúng mình sẽ tạm đóng cửa vài ngày để về nhà, ăn Tết, thở chậm lại một chút sau một năm trồng, chăm sóc cây, sơ chế cà phê, rang, pha, kể chuyện cùng mọi người.
✨ Tối 17:00 - 19/02/2026: Chúng mình có một buổi tiệc nhỏ, thân mật cho tất cả bạn bè và những người đã luôn ủng hộ Designer Coffee. Không quá cầu kỳ, chỉ là gặp nhau, uống với nhau một ly, nói vài câu đầu năm tại Designer Coffee Shop.

Designer Coffee will be closed for Tet (Lunar New Year) from February 16th to 19th, 2026.
We will be temporarily closed for a few days to go home, celebrate Tet, and slow down after a year of planting, caring for plants, processing coffee, roasting, brewing, and sharing stories with everyone.
✨ On the evening of February 19th, 2026, we will have a small, intimate party for all our friends and those who have always supported Designer Coffee. It won't be anything fancy, just a get-together, a drink, and a few New Year's greetings at Designer Coffee Shop.

The shop will reopen, but with a special touch: On February 20th and 21st, 2026, the shop will be staffed by two special farmers, the very people who grow the coffee beans you drink every day.

Around the Cup, Around the World
Cupping Recap - Xiamen, China | 7 Feb 2026
Our first stop of Around the Cup, Around the World 2026 began in Xiamen - a city quietly becoming one of China’s most vibrant hubs for specialty coffee.
We were invited by Fresh Color Coffee Roastery Factory, a social hub where roasters, brewers, and coffee professionals regularly gather to exchange ideas, taste, and challenge perspectives. The participants of this cupping were largely industry insiders: roasters, baristas, and competition-level brewers - people with trained palates and strong opinions.
Yet, despite their experience, most of them shared one thing in common: very limited exposure to Vietnamese coffee, and almost none to Vietnamese specialty coffee.
For many, this was not only their first encounter with Vietnamese fine Robusta, but also their first time tasting Liberica at a specialty level.
The session was structured in two parts.
In the first half, we shared the why and how behind Fair Farm Vietnam and Designer Coffee 's work:
Why Vietnam should not be defined by commodity coffee alone.
Why Robusta and Liberica deserve a place in the specialty conversation.
How processing, selection, and fermentation can reshape both varieties.
And most importantly: what they can taste like when handled with intention.
For many participants, this was a reframing moment. Robusta was no longer just “strong” or “bitter”, and Liberica was no longer just “strange” or “wild”. They became varieties with terroir, structure, and potential.
The second half was dedicated to cupping.
Watching experienced roasters and brewers lean in, recalibrate their expectations, and quietly re-taste was one of the most meaningful moments of the session. Notes shifted. Conversations slowed. Curiosity took over judgment.
Across the table, and perhaps across the broader Chinese market - Liberica drew the strongest attention.
One barista in particular shared a striking story. She is currently developing a signature drink for a professional competition and has experimented with Liberica from multiple origins. After tasting ours, she paused and said simply: “This is the best Liberica I’ve ever tried.”
For us, that moment alone justified years of experimentation, risk, and belief.
This cupping in Xiamen was not about convincing anyone. It was about opening a door. Vietnamese specialty coffee, especially Robusta and Liberica, is still largely unknown to the world. But moments like this remind us that once people taste without prejudice, the conversation changes naturally.
And the cup still has a long way to travel.

Our "Liberica 99" A Complex & Wild Expression
Do you know Liberica?
Often overlooked, Liberica coffee beans are not common, known for its strong character, and truly distinctive flavor.
In the cup, Liberica 99 shows a complex and wild profile, with notes of wild berries, cocoa, fruity, and dried fruit. The flavor is rich and full-bodied, with deep sweetness, hints of dried jackfruit, and a soft woody smokiness. Low acidity and a long finish make it smooth, memorable, and different from any other coffee.
“When I was young, my mother called this "Cà phê Mít" (Jackfruit coffee tree). The tree grows very tall, so my family used it to block the wind and protect the soil. When we returned to coffee, we planted more Liberica because it creates good shade, supports a more sustainable way of farming. If Arabica is a muse, and Robusta a powerful warrior, then Liberica is the artist - strong and independent, yet gentle and deeply sweet.
