class in our professional kitchen theater is limited to 12 student cooks for personal instruction. Our local chefs will introduce you to Caribbean and island cuisine including a tour of local spices, herbs, produce and proteins. The chef will demonstrate a variety of traditional side dishes before turning the kitching over to you to create a signature main dish which varies seasonally. Your reward is to celebrate with a Caribbean feast that the class has created. Sit at our community table with a glass of wine and immerse yourself in island flavors with fellow chefs! Classes are 9A - 12P and 1P-4P Monday through Saturday. Each student chef will prepare an entree after the island chef presents local herbs, spices and vegetables from island gardens as she prepares accompanying side dishes. Guest cooks will enjoy their entrees with shared side dishes and a glass of wine. The three-hour session is $150 per person which includes all ingredients, your meal and wine. Thomas Cooks kitchen theater is located in historic downtown Charlotte Amalie in the former Grand Hotel Building. Originally built in 1839 as a lavish hotel, the Grand Galleria is now home to our teaching kitchen featuring local chefs and an ever changing selection of artisanal foods and regional specialties.
