Soft, cozy, ginger-spiced muffins for the holidays? Yes please. 🧁 Ingredients: • 1 1/4 cup almond flour • 2 tbsp coconut flour • 1 tsp baking soda • 1 tsp cinnamon • 1/4 tsp ground cloves • 1/4 tsp salt • 1/3 cup almond butter • 1 cup applesauce • 2 eggs • 2 tbsp molasses • 1/4 cup maple syrup • 1 tsp vanilla extract • 2 drops doTERRA Ginger essential oil Frosting: • 1/2 c Greek yogurt • 1 tbsp powdered sugar • 1/4 tsp vanilla extract Method: 1. Preheat oven to 350°F and grease or line a muffin tin. 2. In a bowl, whisk together all wet ingredients. 3. Add dry ingredients and stir until just combined. 4. Scoop batter into 10 muffin molds. 5. Bake 20–25 minutes, until a toothpick comes out almost clean. Cool 10 minutes, then move to a wire rack. 6. Mix frosting ingredients until smooth. Spread on cooled muffins and enjoy!
