Did you know chia seeds were a staple in the diets of the ancient Aztec and Maya people? Chia seeds are an excellent source of fiber, antioxidants, and omega-3. Chia seeds can be added to baked goods, smoothies, oatmeal, and yogurt.

Our own Dr. John Carbone received a distinguished faculty award last month which highlights his efforts in research - congrats John!
“John Carbone, a Registered Dietitian and Associate Professor in the School of Health Sciences, focuses his research on protein processing and impact, and is prolific in disseminating that research. Frequently collaborating with the U.S. Army Research Institute of Environmental Medicine while at Eastern, Dr. Carbone has published an astounding 16 peer-reviewed manuscripts and one book chapter, and presented research 19 times at “international, national, and regional conferences.”

Last week our dietetic students participated in an IPE with physician assistant and social work students, as well as prepared a cooking demonstration and lunch for the group! What's on the menu? Mexican quinoa and chicken stuffed bell peppers with avocado, lime and cilantro toppers - yum!!
