Introducing… Chef Spotlight Dinner Series: Chef Keegan Courtright: The Wayfarer

What started as a childhood spent moving every few years as an Army Brat eventually became the foundation for Chef Keegan Courtright’s love of food, culture, and storytelling.

From spicy tuna hand rolls in Hawaii to Texas comfort food and Carolina vinegar sauces, this menu brings together the places that stayed with him long after the moves ended.

Now, he’s bringing those experiences to the table through an intimate dining experience designed around conversation, connection, and communal dining.

You all sold out Chef Shane’s Spotlight Dinner SO quickly that we made the decision to move the event into a larger space within our venue to accommodate more guests. 👏

A five-course Cajun-inspired dining experience is coming to downtown Wichita for ONE NIGHT ONLY.

Introducing... Chef Spotlight Dinner Series | Spice on the Bayou, Smoke on the Prairie - a Chef Spotlight Dinner Series at NICHE.

From seafood andouille jambalaya to smoked duck pasta and orange semolina cake, every course was built with intention.

On Tuesday, we watched our culinary graduates walk across the stage at WSU Tech’s 61st Commencement Ceremony.

It was such a full-circle moment, especially seeing one of our own culinary students serve as the student speaker.

We are incredibly proud of our graduates and excited to see where they go next in the culinary world.

NICHE had the privilege of welcoming the Greensboro Chamber of Commerce from North Carolina last week for a special culinary experience ✨

As part of NICHE’s mission to celebrate and enhance our culinary landscape, Chef Shane Yates prepared an exclusive off-menu selection inspired by the diverse traditions that continue to shape food across our state. The menu highlighted flavors and influences from Native American, Volga German, Lebanese, and Vietnamese communities throughout Kansas.

Featured dishes included:

• Amish Farmhouse Potatoes
• German Rope Sausage with house-made sauerkraut and whole grain mustard
• Roasted Three Sisters Succotash
• Vietnamese Rice Noodle Salad with Marinated Chicken
• Traditional Fattoush Salad
• Kernza Apple Cobbler
