National Honey Month starts next week. What better time to celebrate the delicious variety you can find in honey. We've got 4 standard honeys: clover, orange blossom, light wildflower, and darker wildflower. Each has its own taste, sweetness, texture, and color. And even within a specific variety of honey, you find a beautiful spectrum. No two honeys are the same. No two honey crops are the same. These are the kind of differences you only find when you keep them as individual varietals and crops, and don't blend them together. Did you know there was so much variety in honey??
