I often get asked what 'Chi Sao' is and how it should be practiced. There are no "right" ways in my opinion -- just different levels of pressure. In our class we practice with the goal of controlling our opponent's structure. As soon as we touch hands, the aim should be to 'disconnect' the opponent from the ground through their musculature so they cannot mount a proper offense.
Then we can train our striking, but without the need to hit hard. Chi Sao develops your ability to sense tension in your opponent's musculature and fascia. When you feel tension, you expand into it through touch. The more tension they have, the easier it is to control their structure. This happens "internally" so can be quite difficult to detect from the outside. In this video, Geisson is trying his best to apply pressure, but because I can feel his tension and relax, I am able to rebound it back to him.
Some light touch sparring at Wing Chun DC. Notice we don't stand in a Wing Chun stance when fighting at a distance. Wing Chun structure must only be used in Wing Chun range (close elbow range).
In this session we were practicing boxing range, so we use structure similar to that of a boxer. Why? Because it's THE MOST EFFICIENT for that particular range.

Ben Cohen does chi sao with Derek at Wing Chun DC. We focus heavily on structure, pressure, and flow at Wing Chun DC, and avoid getting into "slap" fights like many other schools. We feel this is a safer, more effective way to train as it avoids ego confrontations and encourages students to focus on building a solid foundation and key skills.

Of all the questions I get about the usefulness of Wing Chun, how the art fares against boxing is the one I hear the most. It is worth repeating this over and over again: Wing Chun strikes DO NOT WORK against boxing in boxing range. If you want to learn how to handle boxing, you need to be comfortable in boxing range (learn how to parry punches, move your head, and use your feet properly), then learn how to force your opponent into Wing Chun range. And what is Wing Chun range? Chi Sao range.
I've gone into this question in depth in this video, with a live demonstration on how to do this properly. It takes a lot of practice to get down, but it is a vital skill in your Wing Chun arsenal.

In this video, we go over how Chi Sao can be used to block (or rather stop) hooks in a self defense situation. The key points are:
1. Do not try to block hooks from a distance using Wing Chun movements. There are better systems for dealing with strikes at range (think Western boxing).
2. Always seek to close distance and make contact with your opponent. This allows you to 'feel' their movement, as opposed to trying to see it.
3. Develop good posture/structure so that you can connect your opponent's pressure into the floor. This allows you to control their structure, and any potential punches they might throw.
