A gem courtesy of the Great British Tea Party!

Jam Pennies, one of The Queen's favourite afternoon treats. They are miniature raspberry jam sandwiches cut into circles the size of an old English penny, which she enjoys washed down with Earl Grey tea.

To make Jam Pennies, first cut the crusts off white or brown sliced bread. Spread unsalted butter on one slice of bread and raspberry jam on the second slice, then sandwich together. Cut small circles with a round 4cm/1.6inch (diameter) pastry cutter, giving you our mini sandwiches.
