Celebrate the start of summer with the crisp, bright flavors of the season! Try this easy, refreshing salad straight from EatFresh.org—perfect for picnics, BBQs, or a light lunch:

Sweet Corn Summer Salad
🕒 Ready in just 10 minutes, serves 4, and packed with vibrant summer produce!

Ingredients:
2 cups corn kernels
1 tomato, diced
1 cucumber, diced
½ red onion, thinly sliced
¼ cup lime (or lemon) juice
1 tbsp olive oil
½ tsp salt, pepper to taste

1. Toss all the ingredients in a bowl until they are evenly coated.
2. Serve immediately , or chill and serve.

Ditch the soda and hydrate with this delicious and refreshing Strawberry Cucumber Mint-infused water!

Recipe:
🔹 1/2 cup sliced strawberries
🔹 1/2 cucumber, thinly sliced
🔹 A few fresh mint leaves

It's National Healthy Vision Month, and we're celebrating by sharing the best foods and recipes to promote healthy eyes! Try to incorporate foods high in Vitamin A to keep your eyes healthy! These include apricots, cantaloupe, mango, watermelon, and dried plums. Foods high in beta-carotene are also good for your eyes because beta-carotene converts to Vitamin A in the body! These include sweet potatoes, carrots, and spinach.

One of our Enjoy the Taste of Eating Right participants, Ms. Knox, created this delicious version of our featured roasted radish recipe! She said, "Delicious. I made the lemon dressing. I also marinated first in zesty Italian dressing. New favorite."

Older adults are invited to join our sessions every Monday from 2pm to 3pm to learn how to create recipes like this! Choose whether you would like to attend virtually or in person, just remember that when you attend in person, you get to enjoy a taste of each featured recipe.
