*** Salon Du Chocolat 2026 ***
Privileged to be invited back to make a dress with edible mediums at Salon Du Chocolat NYC this past weekend!
This year I chose a young talented designer and award winner illustrator from my town in Warwick NY to design my dress. To celebrate the USA 250 years anniversary, Finbar O’Connor took inspiration from the Statue of Liberty, the National flower, liberty bell, bald eagle, and designs from Native American textiles. I had my amazing team of sugar artists Silvina Barboza and Carolina Lara helping me put this masterpiece together. I couldn’t have been more proud of us working together and having fun during this past 2 months!
Crown : isomalt from .ice
Roses: modeling chocolate made with
Feathers: wafer paper from airbrushed with edible colors
Dress: covered in white chocolate from Valrhona and dusted with edible colors
Panels: edible images covered with white chocolate from Valrhona and edible images from Satin Ice

Gingerbread house made for the Warwick Historical Society. It was approx 30 inches high and made to be consumed!
Thanks to my friends gingerbread master extraordinaire Beatriz Muller from gingerneers and Gloria Baca-lopez an amazing architect for letting me pick your brains to make this house possible!
My contribution to the Pop Culture Pop up Boutique showcasing Jurassic Park’s Blue as an edible purse on display at this year’s Comic Con.
