Hamburger: We all buy hamburger (ground chuck roast) at the food store. Use half of it one day and leave the rest in the fridge for tomorrow. The next day you look at it and it's changing colors and turning brown. By the second day it is totally brown and very unappetizing. Well....I decided to by a whole chuck roast and grind it myself to see if there is a difference. (yes...I happen to have a very large -600 pounds per hour- grinder.). So I ground up a batch and made a hamburger sandwich. OMG...the taste is like the old days....a delicious hamburger flavor (unlike the ground beef from the store...not even close). Left some unfrozen in the fridge for 5 days and it did not change color and turn brown. So....what's up with the store bought ground chuck? Doesn't taste anywhere near how the fresh ground does...turns brown the next day....yuck! So...if you decide to give "grinding your own" a try be sure that the meat and the grinder is near frozen before you grind it or all will be lost.
