Raspberry harvest from our backyard this morning! Raspberries (and blackberries) are my FAVORITE source of fiber! I’m shooting for 30 grams a day and a cup of raspberries has 8 grams of fiber!! Thinking of making some raspberry-chia jam to pack an extra fiber punch! What’s your favorite summer fruit??

Wrapped up week 6 of The Healing Kitchen- supporting detox pathways! Roasted beet salad topped with beet greens/ kale, sweet potato, cauliflower and quinoa salad / and NZ lamb meatballs with green goddess sauce! Looking forward to some fun summer classes!!

How do you all feel about sardines???? They are packed full of nutrients- protein and calcium! These Fishwife ones are a perfect start if you are curious but cautious! They are delicious! I crisped them up in the pan they were perfect for my salad! Are you team sardine or no way?!?!?

With the heatwave coming I’m thinking about dinners where I dint have to turn on the stove! This is shrimp, cucumbers, celery, red onion with a creamy Dijon lemon and dill sauce! Over fresh picked lettuce from our garden!!

It’s happening!! Art of the Charcuterie class at Chuck’s in Salmon Creek! We will make ricotta, taste cheese like a cheesemonger and I will guide you in making a beautiful charcuterie board (just in time for 4th of July parties!!) and then you all EAT the Charcuterie board! Tried a new recipe tonight from ground beef Mediterranean stir fry! I didn’t have garlic (gasp!) so I used sweet and red onions instead. And you know I am always looking to add more fiber so I added a can of beans! Topped with basil, chervil (from my garden!) dill and parsley! It was delicious and so quick!

Picked up some beautiful produce at the yesterday! Beets and rainbow chard from - these beet greens were DELICIOUS sautéed with the chard and zucchini flowers! Monday message- if you don’t like beets try the beet greens!!! 🫜 they are packed with minerals, vitamins and fiber!!

Week 5 of the Healing kitchen - balancing hormones was amazing!! Lovely group of ladies! We had coconut kitchari (rice, lentils, coconut milk and spices) chicken shawarma, easy tahini sauce, and a roasted carrot salad with feta/pistachio crumble! Only one week left- and one spot left in that class! Link in bio to join!
