Local baby beets. So beautiful. Sauteed onion/garlic, added the big greens for a minute or two until wilted. Drizzled the plate with tahini. So easy, so good.

Asparagus season/asparagus every day. Today: Coffee Creek farmers market greens, green onions, radishes, asparagus. Lemon vinaigrette. No, our farmers did not grow the lemons. I love it when I don’t have to go to the grocery.

If you want the lemon vinaigrette recipe, just ask.

Clean out the refrigerator day.
Steamed beets, chickpeas, Violife (fake) feta, spring onions, dill. EVO, lemon juice/zest, Champagne vinegar, salt/pepper.

Next time I think I’ll toast the chickpeas in a skillet with some cumin, coriander.

I’ve been making meals for a housebound woman in Valparaiso for 2 years. I cook whatever she feels like eating and put it in containers in her freezer. I personally eat mostly Plant-Based but I’ve had an extensive food career and can cook anything that’s requested.

Salads are a challenge in the winter so use whatever you’ve got in the fridge.
Organic arugula, cuke, carrot, Asian radish, seeds such as pepitas/sunflower.

Always have a pint dressing in my fridge.
Lemon Vinaigrette: 1 t lemon zest, 1/3 c lemon juice, 1/3-1/2 c extra-virgin olive oil, 2 T white wine vinegar, 1 T Dijon mustard, 1/2 t salt & sugar. Shake.

OK foodie friends, what’s wrong with this picture? Is it better than the last 2 pyramids? Yes, but they still don’t get it. They should’ve asked Dr. Esselstyn or T. Colin Campbell. Steak, cheese, but where’s the plant-based protein? (Do I see a few beans at the bottom of the pyramid?)

According to Google, the National Cattlemen‘s Association and the National  Dairy Council were involved with the new dietary guidelines, as always. It’s not about healthy living, it’s about who has more $.

Squash tools:
Squash season can be dangerous. Something I discovered; use a rubber mail it and pound down on the knife. If you’re making a recipe with cubed squash, use a carrot peeler after it’s been sliced. Clean out the seeds with a soup spoon.

We like Sunshine squash and Delicata.

I had to take a pic of the weirdest cabbage I’ve ever seen. A special variety from Nash at Five Hands Farm, Coffee Creek farmers market. High moisture content and supposed to be very delicious.

First time: Made sun-dried tomatoes in the oven @ 200 degrees. They were tasty but it took 7 hours. Not doing that again.😊
