As our final week of meat fabrication begins today, we can now consider ourselves “meat heads”. Our culinary class would like to express our gratitude to Kern Meats. Matt Sherman was an excellent teacher. Following our informative tour, Shayne McCrady cooked three different grades of steak for us. After our experience, we became more proficient at identifying different cuts of meat. Thank you for the tour and the new knowledge about meats.

As night falls, the brightest stars shine. It is an honor to congratulate the graduated 2nd years, may your next steps be as precise as your knife cuts. As for the white hats, we have a new chapter of education and responsibility ahead of us. It was a pleasure to cook with every student in our culinary program. Tag your friends! We will see each other again in the future. Be excited!!

Yesterday, ACF Chef de Cuisine Association of St. Louis held their annual "Cheftoberfest" event- a fall celebration of German food and drink! Several accomplished chefs from the St. Louis region gathered to present their take on the cuisine.
Amongst those presenting was East Central College, with a few of our culinary students bringing a dish of Kartoffelpfannkuchen - a potato pancake served with duck breast and an Oktoberfest sauce.
This event was a great way for our students to showcase their skills, and make some industry connections!

Take a look at what our Culinary Arts students have been learning!
09/15/2023
Yesterday our Culinary Arts second years prepared a glorious feast, as a fantastic way to wrap up their Meat & Fish ID & Fabrication class!
The students spent the last several weeks learning all they could about the butchery of many different animals commonly used as ingredients in kitchens everywhere.
From floppy fish to four legged fauna, they were taught to break down every bit in order to render usable product.
While still only early on in the semester, we're proud to see our students already advancing in their culinary knowledge!
