We raise our sturgeon in fresh, free-flowing natural currents. Based on decades of research and a strong tradition of epicurean delight, Black River Caviar is the result of a unique combination of science, art, quality assurance, and continuous devotion. iver Caviar strive for perfection through an unrivaled concept that produces a clean, quality product. Our commitment to respect the quality of life and environment of the Rio Negro and the combination of natural and skillful farming techniques allow our sturgeons to grow in a naturally healthy way, creating a more consistently clean and flavorful product. Our wild-raised farm system consists of more than 8000 m2 of flow-through raceways and is fed directly with natural pristine water from the river, avoiding the use of recycled water. This feature differentiates us completely from the rest of the producers around the world, as we are able to mimic the wild habitat in which these fish originate.
