🍏 Mini Apple Pies

Ingredients

* 2 Granny Smith apples, peeled and diced into bite-size pieces
* Juice of ½ lemon
* Brown sugar, to taste
* Granulated sugar, to taste
* Cinnamon, to taste
* Butter, for sautéing
* 1 package store-bought puff pastry, thawed
* 1 egg, beaten with a splash of water for egg wash

Directions

1. Prepare the apples. Peel and dice the Granny Smith apples into small, bite-size pieces. Squeeze the lemon juice over them to help prevent browning.
2. Add the sweetness. Sprinkle the apples with brown sugar, granulated sugar, and cinnamon. I don’t really measure—I add enough to lightly coat all the apples.
3. Sauté. Melt a little butter in a pan and sauté the apples for about 5–7 minutes. Don’t overcook them! You want them slightly firm since they’ll continue cooking in the oven. Remove from the heat and let them cool completely.
4. Prepare the pastry. Bring the puff pastry to room temperature, then gently smooth it out with a rolling pin. Cut it into rectangles or squares depending on how big you want your mini pies.
5. Fill & seal. Spoon the cooled apple filling onto one side of each piece of pastry. Brush a little egg wash around the edges, fold the pastry over, and use a fork to press and seal the edges.
6. Vent the pies. Cut 3–4 small slits across the top of each pie so steam can escape while baking.
7. Brush & bake. Brush the tops with egg wash for that beautiful golden-brown finish. Place on a baking sheet and bake at 400°F for about 15 minutes, or until puffed and golden brown.
8. Cool & enjoy! Let them cool for a few minutes before serving.

These little pies are crispy and flaky on the outside with warm, cinnamon-sugar apples on the inside. They’re perfect for dessert, an afternoon treat, or even a sweet snack on the go.

🍎 Apple Pie Greek Yogurt Parfaits

A simple, delicious parfait that tastes like apple pie for breakfast!

Ingredients

* Granny Smith apples, peeled and diced
* Butter
* Cinnamon
* Brown sugar
* A little granulated sugar
* Greek yogurt
* Crunchy granola

Directions

1. Peel and dice the Granny Smith apples.
2. Melt a little butter in a skillet over medium heat.
3. Add the apples, cinnamon, brown sugar, and a small amount of granulated sugar.
4. Sauté until the apples are tender and caramelized but still have a little bite.
5. Remove from the heat and let the apples cool completely so they don’t melt or thin out the yogurt.
6. Spoon Greek yogurt into a glass or container.
7. Top with the cinnamon-sautéed apples and finish with plenty of crunchy granola.

Kat’s Kitchen Tip: Layer the yogurt, apples, and granola in a clear glass for a pretty parfait. If you’re meal-prepping these, keep the granola separate until you’re ready to eat so it stays crunchy. 🍎🥄

SMOKED TURKEY PITA POCKETS

✨ Season with:
• Black pepper
• Cayenne pepper
• Garlic powder
• Garlic salt
• Lemon pepper
• Caribbean jerk seasoning

• Parsley flakes

🔥 Smoke at 225°F for 3½–4 hours, flipping halfway through. Pull it at 160°F, wrap it in foil, and let it rest for an hour before slicing.

The Ultimate Summer Pasta Salad

This is my go-to pasta salad all summer long! It’s fresh, flavorful, and comes together in minutes. Perfect for BBQs, potlucks, family dinners, or meal prep!

🥗 Ingredients:
● 1 lb large fusilli pasta (or your favorite pasta)
● 1 bunch green onions, sliced
● 1 (6 oz) can sliced black olives, drained
● 1 pint grape or cherry tomatoes, quartered
● 1½ cups mini cucumbers, diced
● ¼ cup fresh parsley, chopped
● Cheese Fantastico dressing (add to taste)
● 1–2 tbsp Salad Supreme seasoning
● Fresh ground black pepper, to taste
Directions:
1. Cook pasta until al dente. Drain and rinse with cold water.
2. Add the green onions, olives, tomatoes, cucumbers, and parsley.
3. Pour in Cheese Fantastico dressing and toss until everything is evenly coated.
4. Season with Salad Supreme and black pepper.
5. Chill for at least 30 minutes before serving for the best flavor!
