The Oklahoma State University Department of Animal and Food Sciences offers two majors (animal science and food science). It is one of the largest department on campus with more than 1,000 undergraduate students, but with a small town feel, a caring attitude and a commitment to every student.

Words cannot adequately describe the loss felt by those who knew Jarold Callahan. Jarold was an active alum, strong supporter, and true friend to our department. Our hearts go out to his family at this difficult time. A Celebration of Life will be held at 10 AM Friday, December 29th at the National Cowboy and Western Heritage Museum in Oklahoma City.

✨Congratulations to Dr. Andy Cole for being honored as a 2023 Oklahoma State University Ferguson College of Agriculture Distinguished Alumnus!✨

Dr. Cole of Amarillo, Texas, received a bachelor’s degree in agriculture with an animal science option and a minor in biology from West Texas State University, followed by a master’s degree in animal science and a doctoral degree in animal nutrition with a minor in biochemistry from OSU. He is an internationally recognized scientist whose contributions have impacted the beef cattle industry.

Stacey Gunter was recognized as an Advanced Graduate of Distinction and Ron Hays received the Distinguished Service Award.

Carlee Salisbury received the 2023 Outstanding Graduate Student Award (M.S.) at the OSU Animal and Food Sciences Scholarship Banquet. Congratulations!

Carlee joined Dr. Andrew Foote’s lab as an undergraduate and then as a master’s student. Carlee’s research is focused on reducing nitrogen emissions, a potent polluter and environmental concern, in feedlot cattle, specifically dairy-beef steers. Her approach is to match the estimated protein requirements of the cattle as they grow to reduce the protein content of the diet and to utilize growth promotants such as implants. This approach also allows the consideration of other key aspects of sustainable animal production since the methods to reduce emissions must be economically viable to the producers as well as socially acceptable to the general public.

During Carlee’s time as graduate student, she received the Andy Cole Graduate Travel Scholarship and the Dr. Dennis and Marta White Graduate Fellowship Scholarship. Carlee has mentored a Freshman Research Scholar and three Undergraduate Research Scholars, and has assisted countless graduate students with lab work and data collection. Carlee has presented two abstracts at national meetings and has been coauthor on seven additional abstracts. Additionally, Carlee is coauthor of two peer-reviewed journal articles in the Journal of Animal Science. In addition to her research activities, Carlee has worked as a teaching assistant for the Principles of Nutrition course.

After completion of her M.S. degree, Carlee plans to pursue a Ph.D.

Morgan Denzer received a 2023 Outstanding Graduate Student Award (Ph.D.) at the OSU Animal and Food Sciences Scholarship Banquet.

Morgan's research focuses on understanding the biochemical basis of beef discoloration. She served as a teaching assistant for four courses and also taught lab sessions. Morgan has published over 10 peer-reviewed articles and presented 17 abstracts at national meetings. She mentored several undergraduate students during their research projects, including three students who were selected as Wentz Research Scholars.

Morgan was awarded both the 2023 Southern Section American Society of Animal Science Emerging Scholar Award and the American Meat Science Association Cleaver Award. While at OSU, she has served as the student representative for the Muscle Foods Division of the Institute of Food Technologists (IFT), coach of the Meat Science Quiz Bowl Team, and president of the Animal Science Graduate Student Association. She plans to finish her Ph.D. in the spring of 2023.

Anna Goldkamp is one of two students to receive the 2023 Outstanding Graduate Student Award (Ph.D.). She was formally recognized during the OSU Animal and Food Sciences Scholarship Banquet.

Anna has been working in Dr. Darren Hagen’s lab since January 2018. Her research has focused primarily on expression and dysregulation of transfer RNAs, small non-coding RNAs, codon usage frequency, and the impact of each of these on protein translation efficiency in livestock.

Anna has mentored nine undergraduate research students and served as a teaching assistant for the Animal Genetics course. She also volunteered for the Oklahoma State and American Association of Animal Science Southern Section Academic Quadrathlon competition.

Anna is planning to graduate in the fall with her Ph.D. in animal science and anticipates continuing her scientific training as a postdoctoral fellow. She is currently entertaining multiple postdoctoral fellow opportunities within academia, industry, and government agencies.

Camila Armas received third place at the 37th Annual Whiteman Award Competition. The winners were announced during the OSU Animal and Food Sciences Scholarship Banquet and the graduate students were formally recognized.

The event was established to encourage clarity and excellence in presenting results of thesis research. Camila's presentation was titled, "Identification of post-transcriptional modifications in honeybees (Apls mel-lifera) using Oxford Nanopore Sequencing."

The event was established to encourage clarity and excellence in presenting results of thesis research. Paul's presentation was titled, "An evaluation of Oklahoma beef calf market characteristic trends from 2011 to 2021."

Cal Schultz received an Award of Merit at the 2023 OSU Animal and Food Sciences Scholarship Banquet. Congratulations!

Cal grew up in Faribault, Minnesota, on a diversified livestock operation where he helped raise Red Angus cattle and exhibited goats at stock shows throughout the upper Midwest.

Upon graduation in December, Cal plans on pursuing his master’s degree in meat science.

Elizabeth Pribil received an Award of Merit at the 2023 OSU Animal and Food Sciences Scholarship Banquet. Congratulations!

Elizabeth grew up in Oklahoma and showed purebred Hereford females at the local, county, state, and national levels. She was also heavily involved in her high school’s FFA meat judging team.

Elizabeth will graduate this fall and plans to obtain a master’s degree in meat science starting next spring.

Megan Newlon was one of three Award of Merit recipients recognized at the 2023 OSU Animal and Food Sciences Scholarship Banquet. Congratulations!

Megan was raised on a family farm in southwest Kansas. She was involved in the local 4-H and FFA where she raised and exhibited cattle, hogs, sheep, and horses.

After graduation, Megan will continue her education here in Stillwater pursuing a master’s degree in animal science under the guidance of Dr. Steven Cooper.

Grace Harris was named the 2023 Outstanding Senior at the OSU Animal and Food Sciences Scholarship Banquet. Congratulations!

Grace is originally from Horatio, Arkansas, where she grew up competitively exhibiting livestock. This led her to Oklahoma where she fell in love with Stillwater.

After graduation, Grace will be pursing a master’s degree in meat science at OSU under Dr. Gretchen Mafi.

Dr. Ravi Jadeja was recognized with the Tyler Award at the 2023 OSU Animal and Food Sciences Scholarship Banquet.

Jadeja is an associate professor and food safety specialist. During the last eight years at Oklahoma State University, he has developed eight new courses in food safety and has worked with more than 85 food companies in Oklahoma to develop food safety plans.

He also received 58 funded grants totaling $9.96 million as a principal investigator and co-principal investigator. Importantly, these grants have touched all three of the Land-Grant missions of teaching, research, and outreach. He has given 34 invited presentations and has three pending patents.

Dr. Jadeja has mentored 15 graduate students as a chair and served on 16 graduate student committees. In addition, he hosted eight undergraduate research scholars and four high school students. Several of his students were recognized with national and regional awards.
