Ingredients
• 1 box yellow cake mix
• 1 can pineapple slices, juice reserved
• 1 cup pineapple juice
• 4 large eggs
• ¼ cup vegetable oil
• ¼–½ cup butter, melted
• 1 cup brown sugar
• 1.5 qts Vanilla ice cream (softened)
• Salted caramel sauce
• Maraschino cherries
• 9” Springform pan
• 9” Cake pan
Instructions
1. Preheat the oven to 350°F.
2. Prepare the cake batter: Combine the yellow cake mix, pineapple juice, eggs, and oil. Set the batter aside.
3. Prepare the topping: In a small bowl, combine the brown sugar and butter. Spread the mixture evenly over the bottom of the springform pan.
4. Arrange the pineapple and cherries: Place 7 pineapple slices and maraschino cherries on top of the brown sugar mixture in your desired arrangement.
5. Add the batter: Divide the cake batter evenly between the springform pan and the cake pan.
6. Bake for 20–25 minutes, until a toothpick inserted into the center comes out clean.
7. Cool the cake-pan cake for 15 minutes, then carefully remove it from the pan.
8. Cool the springform-pan cake for 30 minutes or more.
9. Add the ice cream: Spread softened ice cream evenly over the top of the cake in the springform pan.
10. Freeze the assembled cake for at least 20 minutes, preferably longer.
11. Add the salted caramel: Spread a layer of salted caramel sauce over the ice cream, being careful not to let it reach the edges.
12. Assemble the cake: Place the cake-pan cake on top of the salted caramel layer.
13. Freeze the assembled cake for at least 2 hours, preferably longer.
14. Serve: Carefully flip the cake onto a serving platter and remove the springform pan.
15. Enjoy!
