Cooking in Caddo Celebrates America's 250th Birthday!

Registration is now open for our next Cooking in Caddo workshop for ages 9-12 years old. Cooking in Caddo Celebrates America's 250th Birthday will be held on Tuesday, July 7th, from 9:00 am until 1:00 pm. In order to reserve your child's spot, you must register and pay the $20 registration fee. Please drop off or mail your payment to the Caddo Parish Extension Office, 2408 E. 70th Street, Shreveport, LA 71105. Spots are limited!

We had so much fun at “Mini Cooking in Caddo” yesterday! This was the first camp for our mini chefs and they all had a great time. We prepared our own individual pizzas, cupcakes, and fruit and veggie “bugs”. A special thank you goes out to our volunteers! Be on the lookout for future “Mini Cooking in Caddo” camps.

Good morning, Caddo Parish 4-H!

We have an exciting event coming up on Friday, July 31st! As you may have seen on our page, Caddo Parish 4-H will be celebrating its 100th birthday during the 2026–2027 year. What better way to kick off this milestone than with a fun-filled Birthday Bingo Party for the whole family?

Spots are limited! Tickets are $20 per seat, or you can reserve a table of 8 for $150. Payment must be received to reserve your spot. This family-friendly event will be held on Friday, July 31st at the State Fair of Louisiana Cattleman’s Round-Up Room. Dinner will be served at 6:00 p.m., with games beginning at 6:30 p.m.

We hope you are just as excited as we are to celebrate 100 years of Caddo Parish 4-H!

If tickets are still available, they will be sold at the door for $25 each. Don’t wait! Secure your tickets early, as this event is expected to sell quickly!

Mini Cooking in Caddo!

This version of Cooking in Caddo is designed for our Cloverbud youth (rising Kindergarten to 3rd grade students). Each child will enjoy a hands-on cooking experience while learning about food and kitchen safety. Participants will enjoy the food that they prepared for a morning snack and lunch.

This camp will be held on Wednesday, June 10th, from 9:00 am until 1:00 pm.

Spots are limited! Registration and payment is required to reserve your child’s spot. The registration fee is $20 and can be paid via cash, check, money order, or electronic payment. Get ready to dig in and cook with us!

August’s recipe of the month is white beans! If you’re from Louisiana, chances are you’ve planned to cook white beans for dinner only to realize you forgot to soak them overnight. But did you know that an instant pot can take care of that step for you? This white bean recipe is perfect for the back-to-school season. It brings a homemade meal to your table without hours on the stove. Serve it over brown rice for an extra boost of fiber and to help keep blood sugar levels steady!
Ingredients:
- 1 (1 pound) package great northern beans
- 1 tablespoon olive oil
- 1 onion, chopped
- 1/2 cup green bell pepper, diced
- 2 stalks celery, diced
- 8 ounces ham or seasoning meat, chopped
- 5 cups low-sodium chicken broth
- 1 teaspoon ground thyme
- 1 1/2 teaspoons garlic powder
- Salt and pepper to taste
Instructions:
1. Rinse and sort beans. Remove any small stones or debris.
2. Choose sauté on the instant pot and add oil. Add onion, bell pepper and celery, and sauté for 2 minutes. Add ham or meat and sauté for another 1-2 minutes.
3. Add beans, broth, thyme and garlic powder to the pot. Stir well.
4. Turn sauté mode off. Cover instant pot, twist to lock the lid, and turn the valve to sealing. Press the beans/chili button or use manual mode and set to 30 minutes.
5. When the timer beeps, allow the pressure to release naturally for 20 minutes. Then turn the valve to venting.
6. Remove lid and use a spoon or potato masher to mash beans to desired creamy consistency. Add salt and pepper to taste.
7. Serve over hot cooked rice.
