It’s a good day to make soup, and today it will be a sweet potato soup with lots of carrots, onions,shallots,garlic,and sweet potatoes of course. Looking forward to a bowl for supper tonite. Happy snow day!!

Trying a new brunch / lunch / dinner idea. Sautéed onions,garlic,spinach and marinated artichoke hearts tossed in toasted sourdough bread cubes and waiting for its bath of eggs,Boursin cheese, and cream, topped with some gruyere cheese and chilled for a few hours(1hour-24 hours) then baked and I am serving it with chicken apple sausage. I am excited to try this for dinner tonight!!

CRUSTLESS ASPARAGUS GRUYERE PIE
🔸 9” glass pie plate
🔸 1 Tbl. chopped fresh thyme
🔸 3 Tbl. unsalted butter, divided
🔸 ½ cup flour
🔸 3 Tbl. finely grated parmesan cheese
🔸 ¼ tsp. freshly grated nutmeg
🔸 2 cups gruyere cheese, shredded, divided
🔸 ¾ tsp. baking powder
🔸 2 cups fresh asparagus, cut ½ “ pieces
🔸 ½ tsp. salt & pepper
🔸 2 med. shallots, thinly sliced
🔸 1 heaping tsp. Dijon mustard
🔸 4 scallions, thinly sliced
🔸 6 eggs
🔸 4 oz. cream cheese, cubed
🔸 1 cup ½ & ½ or whipping cream
🔸 Chives for garnish, if desired
Preheat oven to 350 degrees. Using a pastry brush, spread 1 Tb. of soft butter on bottom and sides of pie plate. Sprinkle with Parmesan on bottom and sides and set aside
In a medium skillet, melt remaining 2 Tbl. butter, then add asparagus and shallots and sauté to soften them. Then add garlic and cook another couple minutes. Turn off heat and add thyme and scallions. Allow mixture to cool while you assemble rest of ingredients.
In a large bowl, whisk eggs until broken up and combined. Add cream and Dijon and whisk to combine. In a separate bowl, mix flour, nutmeg, salt and pepper. Combine wet and dry ingredients and mix until smooth. Add cubed cream cheese, 1 cup of gruyere and asparagus to mixture and combine well with a spatula.
Pour into parmesan prepared pie plate and distribute evenly. Sprinkle with remaining gruyere and bake in 350 degree oven for 35 minutes until set and top is golden brown. Remove from oven allow to rest 10 minutes before cutting in pie shape wedges. Serve warm, garnished with chives. Serves 6 to 8. .

A before and after picture of our dinner tonight, an Asparagus,shallot, and gruyere crustless pie. It is/was delicious. Will get the corrections on the computer and get it out to you all soon. It would make a fabulous side dish for a grilled meat, but we had it with fresh fruit, and a slice of cranberry pecan bread.
