The art of raking coffee. ☀️
A hands-on moment at origin — where careful attention, tradition, and patience shape the quality in every cup.
It may look simple, but this step is critical. Raking ensures even airflow and consistent moisture reduction, protecting the integrity of the lot and preserving the flavors developing inside each cherry. Too little movement — and the coffee can dry unevenly. Too much heat — and the profile can shift.
This is quality in motion.
Being present at origin means engaging in every stage of the process, not just tasting the final cup. From patio to port, every detail matters. ☕️🌱

Coffee question of the day: What is the purpose of raking coffee? ☕️
Raking coffee is a crucial step in coffee processing during the drying stage. Coffee is raked throughout the day, to prevent the coffee from spoiling and to evenly dry the batches. Depending on the weather, this process might continue for several weeks until the moisture level drops to 11%.
The beans must be raked 2 – 3 times per hour for about 6 – 8 hours. More raking than average is often required beyond this point to ensure nothing rots or ferments. Once dried to the proper moisture, the coffee, with parchment will still have dried mucilage around the outside. It will be put to rest and then finally dry-milled before being packaged and stored, and prepared for shipment to head to our warehouses.
