For our last Spotlight, let’s look into !

Now we’re featuring a Spotlight: Yukhoe!

This is basically the version of . It’s turned into a , fantastic, and totally dish. The result is cool, garlicky, nutty, a little sweet, and of course meaty. One can the contrasts between the , , sweetness, saltiness, and cold refreshing beef. You can add an egg on top and the whole thing with other accompaniments too. It’s extremely versatile. Here’s a with :

-quality lean beef
-bosc or anjou pears
-sugar
-cold water
-minced garlic
-minced scallion
-soy sauce
-honey
-toasted sesame oil
-black pepper
-toasted sesame seeds
-pine nuts
-egg yolks

Directions: Place the beef in your freezer. For the sauce, combine the garlic, green onion, soy sauce, honey or sugar, toasted sesame oil, and sesame seeds. Mix well and chill. Peel the pears and cut lengthwise into quarters. Remove the woody core in the center and slice into matchstick shapes. Dissolve sugar in cold water and add the pear matchsticks. Chill until beef is ready, then drain. When the beef is almost frozen but can still be sliced, cut that into matchsticks about the same size as the pear ones. Mix with seasoning sauce. On serving plates, make a bed of the pear matchsticks and then add a healthy scoop of beef in the center of each. Garnish with pine nuts and egg yolk if you’d like. Serve immediately.

It was a trade hub and at one point too. It also served a strategic role during the Korean War (Battle of Taegu) and grew rapidly as an center in the latter half of the 20th century. And here’s a Spotlight for ya - !

Jjimdak (찜닭) is a . It originated in the city of Andong. It’s savory, mildly salty, and sweet, with a very subtle spicy kick. It has a somewhat complex flavor and is hearty. Because of all that, it’s highly addictive and comforting. ! In general, “Jjim” refers to dishes that are steamed, stewed, or braised in a sauce. And “dak” means chicken. These two syllables can be reversed, so jjimdak is also called dakjjim (닭찜). This dish is a huge favorite and is easy to make at home with only a few basic ingredients such as chicken, various vegetables, Korean soy sauce, and sweet potato or glass noodles. It looks insanely ! Would you try it?
